Carrot Cake Baked Oats
Ingredients
2 cups oats
1 cup grated carrots
1/2 cup oat flour
1/4 tsp nutmeg
1 1/2 tsp cinnamon
1/4 tsp salt
1/4 cup maple syrup
2 tsp baking powder
1 tsp vanilla extract
1 1/4 cup water
Frosting
1 cup plain unsweetened yogurt, I used coconut
2 Tbs @tryagoge vanilla protein
Mix all of the wet ingredients, then add the dry ingredients. Bake at 350 degrees for approx. 45 minutes or until the edges are golden. Let cool slightly, then mix the frosting and spread on top. Sprinkle with a little chopped walnuts. Enjoy!

Mini Protein Blueberry š« Muffins
Ingredients
1 cup Blanched almond flour
1/2 cup gluten-free all purpose flour
2 Tbs arrowroot
1/4 cup oat flour
1/4 cup @tryagoge Unflavored Hemp protein
1/4 tsp Salt
1/4 cup Coconut sugar
2 1/2 tsp Baking powder
1/2 tsp Vanilla extract
1/4 cup Coconut oil
1/4 cup Agave nectar
1/4 cup + 2 Tbs Water
About 1/2 cup Frozen blueberries
Mix all the dry ingredients, then add all the liquid ingredients and stir until combined. Scoop batter into a coconut oil sprayed mini muffin tin. Layer the frozen blueberries in between scoops of batter. Or stir them into the batter before scooping. Sprinkle with a little coconut sugar on top. Preheat oven to 350 degrees, bake for 25 minutes. Makes 12 mini muffins.
