The cloudberry bog which at first was an experiment to mimic the experience of picking the berries has turned out to become a signature of mine. The experience of eating if should feel like, smell like and look like what you’d experience picking the berries. Containing a baba inspired cake soaked in a lightly alcoholic syrup flavoured with wild rosemary, this represents the wet grounds you have to step into. A pure consommé of the best juices of the cloudberries, separated only by gravity lightly sweetened and infused with forest herbs. Sorbets of cloudberries, Sea buckthorn and quince. Reindeer moss candied and finished with a few droplets of sea buckthorn seed oil.
