It was great to be back @thefumballystables in December after a long break. It was a special dinner and we were delighted to share the room with each and every guest.
We will be returning for one more evening February 25th, we’d love if you could join us! Expect a shared table of seasonal bites, beautiful wines, fun and conversation.

Although summer is coming to a close and it’s been almost two months since our last dinner! We simply had to share these gorgeous photos from a really special evening back in July. Big thanks to @jim.bob.stone for capturing the joy
Wine played a central role in the beginnings of our dinners. We encouraged everyone who came to Jill’s house to bring a bottle to share with the table. We’d line all the bottles on the window ledge outside and Lotte and Clara would plot and plan our journey throughout the meal. It sparked conversations and brought us all together across the table.
We’ve missed this dearly, while we have kept the dinners BYOB and encouraged sharing amongst our guests, we missed being involved in that experience too.
For our next dinner, through the Fumbally, we will be able to offer wines on the night. Lotte, together with our good friend Clara, has selected two wines to be sold by the glass and a short list of bottles that will also be available.
You are still welcome to BYOB of course.

We had such a great time at our dinner last month, cooking dishes we loved from our largest variety of suppliers so far.
It’s been so great to see the produce change as the Summer weather has rolled in (yes, hard to believe it’s Summer with the week that’s in it!).
With that being said, we’re even more excited for our next dinner at the end of this month. Menu planning’s in action and the possibility of tomatoes, peppers and all the berries have us brimming with ideas.

The menu for our May dinner was, as always, crafted by the season. Using the best produce we could get our hands on from local suppliers.
Our June dinner will be designed with the same philosophy but we’re so excited for the produce that the warmer months will bring.

This time next week we’ll be welcoming everyone to the stables with a drink.
When we hosted dinners in Jill’s house, we began a cheeky pre-service tradition of a shot of tequila. So naturally, we had to use that as our alcohol.
The rest of the drink was inspired, as always, by seasonal availability. We combined a syrup of @mcnallyfamilyfarm chocolate mint with tequila, tonic and finished with a @ryansrhubarb granita.

With our next dinner just over a week away we wanted to share a bit more about what we do and how we started doing it.
Over the past few months, we've hosted dinners with friends in our houses. Sharing food, stories and great bottles of wine. This became a time to try out new dishes, cook things we were excited about and feed those around us.
First, we outgrew the chairs so we borrowed two from Eoghan’s aunt down the road. Next we outgrew the tables so we nabbed one from the Fumbally. Unsurprisingly the tables later outgrew the sitting room so we decided to make the move into a bigger location, the ever so lovely Fumbally Stables.
Here we will serve similar style meals. Multiple courses; some small and personal, some shared with those around us. We keep it as local and seasonal as we can, with every dish having a purpose and story behind it. As cooks our focus is on honest cooking and freshness.
While bringing food to the table for friends and strangers we reveled in how each person brings their own stories, laughter, and selves to the table. Whether that’s sharing a bottle of wine, snapping photos, sharing anecdotes, listening intently or preheating the plates we all bring something different to the table - that’s why we chose it as our name.
We hope you can join us, eat well, relax and bring your story to the table.
