Fire meets culture. ― 食文化が交差する都市で、焼鳥の本質を灯す TORIKAZE Taipei Grand Opening 鳥かぜ（Torikaze）は、鳥しきICHIMONの焼鳥哲学を核に、日本発の焼鳥文化をアジアへと広げていく、グローバル焼鳥ブランドです。 素材と向き合い、己を見つめ、そしてその土地の環境や一瞬一瞬と誠実に向き合いながら、焼鳥という料理の本質を、思想・技術・体験価値ごと丁寧に伝えていくことを、ブランドの軸としています。 今後も鳥かぜは、焼鳥という日本独自の食文化を、国や言語を越えて共有できる体験として磨き上げ、アジア、そしてその先の世界へと届けてまいります。 2026年5月26日（火）より、 2026年6月・7月分のご予約受付を開始いたします。 東京・旗艦店の「鳥かぜ（TORIKAZE TOKYO）」はOMAKASEサイトよりご予約を受け付けております。 Torikaze is a global yakitori brand originating in Japan, built upon the yakitori philosophy of Torishiki ICHIMON, with a mission to expand Japanese yakitori culture across Asia. At the heart of the brand is a sincere dedication to the ingredients, constant self-reflection as craftsmen, and an honest engagement with the local environment and each fleeting moment. Through this philosophy, Torikaze thoughtfully conveys the true essence of yakitori—embracing its values, techniques, and experiential depth as a unified whole. As Torikaze moves forward, we will continue to refine yakitori as an experience that transcends borders and languages, sharing Japan’s unique food culture with Asia and, ultimately, with the wider world. Reservations Reservations for June and July 2026 will open on Tuesday, May 26, 2026. Bookings are available via the OMAKASE website for our Tokyo flagship restaurant, Torikaze (TORIKAZE TOKYO).
