Saw a whole box of cherry tomatoes for £1 at the market but have nothing in your fridge? Nooooo prablam! Vegetarian tomato pesto pasta it is! 🍅🍝 . . 1. Roast the tomatoes, either plain or dressed with any combo of olive oil, salt and pepper, garlic powder, oregano, zaatar (obvs the more the merrier hehe since this is a very tomatoey pasta) 2. Boil your pasta, any penne / longer pasta will do, though the longer one is tastier for the tomatoey slurp 👌🏻 #noimnotbiasedyourebiased 3. Fry chopped onions in oil 4. When the cherry tomatoes are soft and their skin is all wrinkly / starting to brown, tip the whole thing into the pan with the onions 5. Add some red pesto sauce (a few table spoonfuls for a good coating) 6. Add chopped sundried tomatoes because you have a weakness for them and they make everything taste good 7. Add in crushed vegan burger patties that you've had lying around in your fridge for a bit too long because if this isn't their time to shine they gonna die 8. Make enough for your tummy (I meal prepped enough for 4 portions!) (9. What can you do when you have leftover sausages, spinach, and beef bolognese? Why not throw them all onto some perfectly al dente pasta? 🍝🥬🌭 "Refresh" the dish with a turn of black pepper, some red chilli flakes (don't go crazy, speaking from experience I've been overly enthusiastic many a time with chilli flakes and regretted it afterwards 😂) and you have another super healthy, fresh dish! . . Quick stir fry veg paired with roasted chicken! 🥒🌶🍗 this combo was so good I've had it twice! 🙈 Inspired by @jycprr who made padron peppers the other day, with simple olive oil and salt fried peppers that tasted so good 🤤 . . Veg stir fry (from whatever was in my fridge): 1. Wash veggies (peppers, zucchini, spinach) 2. Cut zucchini in whatever style you like (I like long strips so I used a peeler, makes eating it more fun for me haha) 3. Fry the peppers in olive oil until their skin starts to wrinkle and charr 4. Throw in the zucchini and fry it together 5. Throw in the spinach and fry 6. Add spices - salt and pepper, with optional garlic powder, cumin, paprika . . Chicken prep: 1. I marinated 2 batches of chicken, one with garlic, paprika, cumin and the other with soy and ginger powder, leave to marinade for 20mins or overnight if you're organised (I wasn't) 2. Put in oven until crispy! Easy and fresh 3 ingredient starter! Prepping it only takes a few minutes as well. In my case, I had this as a quick breakfast in the sun ☀️😉 . . All you need is mozzarella, basil leaves and tomato. Olive oil and black pepper as desired. So simple and yum! This mozzarella is courtesy of @marctiell17 and @thewayoutravel all the way from Naples! The Ultimate Chicken Fajitas! I have never made fajitas this good. . . Recipe: 500 gram boneless skinless chicken (thigh meat here) Veggies of your choice, used left over bean salad and salsa Fresca (chopped tomatoes, onions, coriander leaf and chili with lemon juice, olive oil, salt, sugar) Spices: .75 teaspoon of Paprika Garlic powder Onion powder Chili flake Chilé powder Oregano Salt sugar pepper 1 teaspoon heap of cumin and cayenne chili powder Mix it with half a lemons juice and 30 ml beer, yes beer! Use corona!! Stab your chicken with a fork all over, coat generously. Let sit for minimum 30 at room temp. This is a quick prep dish. Cook on high heat in a sturdy pan to get a good char and cook the meat through. I fried out some onions in the leftover seasoning as the chicken rested. Wrap, roll, rock!

Double brined fried chicken! We all have cravings and comfort food. Be it work or exam stress that yanks it out of us or a celebration or reunion! This is one of ours and while it doesn’t fit the bill of ease I couldn’t not share. Brined in pickle juice (20 hours) and then buttermilk (4hours), a heavily seasoned flour and this chicken was ready for the fryer. Made some copycat Cane’s Chicken dipping sauce that went oh so well. Happy times abound! . . Recipe: 500 grams chicken (skinless boneless used here) 2/3 cup Pickle brine (from a pickle jar, enough to submerge) 2/3 cup buttermilk 1 cup all purpose flour Teaspoon(s) of your seasonings Used here were : Cayenne, paprika, garlic powder, onion powder, mace, coriander powder, fennel powder, salt and pepper. In order of quantity. Brine in pickle juice for 12-24 hours Drain and submerge in buttermilk for 4 hours Mix into flour seasoning mix. Lay out to dry for 20-30, then toss of flour seasoning again. Heat 3-4 inches of high heat threshold oil (canola/peanut) to 300-325 F°. Fry evenly in batches, approx 5-7 minutes of frying. 🇫🇷MUSTARD CRUSTED SLAMMIN’ SALMON! 🎣 This dish is a BEAUTY. Every. Single. Time. Super easy, time efficient, massive flavor, and delightfully impressive. You’ll ideally need to Sear the Skin in a nonstick pan and then place it under a Broil! IE: the top heating coil in your oven. Alternatively you can bake the whole thing but you may not get the ideal crust on top. -Steps- 1. Preheat your broiler and a medium nonstick pan 2. Pat down your salmon fillet with a paper towel. 3. Mix the mustard coating as listed, or to your preference and baste in the flesh side of the your salmon 4. Mix Panko breadcrumb, or crumb of your choice, with olive oil. I suggest 2-3 tbsp crumb and 2 tsp olive oil. Press your oiled crumb onto your mustard coating gently. 5. Sear the skin in a hot pat with a bit of olive oil. Ideally nonstick 6. Once seared, place it under your broiler to get it to cook from the top and develop that beautiful crust. Et Voilà! You’re done! Ensure it’s cooked to your preference of doneness as Salmon, like a good steak, is lovely when it isn’t cooked overly. Enjoy with beans, potatoes, rice, spinach, quinoa.. literally anything goes well! Made soup noodle! 🍲 If I could just eat one thing for the rest of my life, it would be soupy noodles 😍🤩😍🤩😍 All you need is some stock (I premade mine by boiling leftover chicken bones and leeks; see my previous post), some protein (egg and/or chicken) and some veg! The veg I had available today was some carrots, spring onion and kimchiiiii. . . 1. Stir fry the spring onion (white parts, save the green bits for garnish) in sesame oil in a pot 2. Throw in sliced or shaved carrots/any kinda veg you want. Recommendations are: bean sprouts, broccoli, peashoots, bak choy, bamboo shoots etc because they go better in soup 3. Add your stock and let it boil. I originally started off by using only half of my stock jar, but after my first taste test i poured in all my stock 😅 4. Let it bubble up. Meanwhile pour hot water onto the vermicelli and watch it loosen up. 5. When the soup is bubbling, crack and immediately stir an egg into the pot. 6. Season with salt and pepper / red chilli flakes / kimchi / fried onions / any toppings you want andddd 7.
