Lucky season to be an @elphingrovefarm sweet corn. For a few years we’ve been juicing the kernels and cooking that juice out like a custard and dehydrating the chaff. The custard is great, the chaff is o.k. This year @downhillflipper decided to try nixtamalizing that chaff. After some trialling, he’s nailed it. There’s a little bit of corn season left so that means a few tortillas/tostadas to come.
