A marvellous meal at Boury in Roeselare.
I had wanted to come here for years, so finally making the journey to
@__boury__ gave me enormous pleasure. I have followed
@timboury and
@_ingewaeles_ for a long time, and sitting in their beautiful dining room at last, with that sense of excitement that only great restaurants can create, was a real joy.
Boury began as something much smaller and, through time, work and vision, grew into one of the great restaurants of Europe. You understand that very quickly once you are there. This is a restaurant shaped by years of work, a clear sense of purpose, and standards that continued to rise. And there is a lesson in that too. At a time when many young chefs are in such a rush to be noticed, Tim Boury and Inge Waeles are a beautiful reminder of what patience, care and real work can build over time. They started small, stayed true to their vision, and created something great. Boury brings together, in exceptional balance, the defining qualities of a great three-star restaurant.
And the food here was glorious. The oyster with corn, dai dai, plankton and kimchi had brilliance and lift. The scallop with hop shoots, Jerusalem artichoke, watercress and flavas was graceful and beautifully clear. The hamachi with Goan curry, okra, sweet potato, ginger and radish brought warmth, energy and superb balance. And the truffles โComme Je Les Aimeโ with Bonnotte potato delivered one of those deeply happy moments at the table when everybody understands exactly why they came.
Then come the details that make Boury even more memorable: the magnificent Madeira trolley, the superb spirits trolley, and the herbs trolley, where you ask for tea and a whole little garden arrives for you to choose from.
I came to Boury with high hopes and left feeling genuinely moved by what Tim Boury and Inge Waeles have built here. There is so much care in this restaurant, and so much beauty in the way that care reaches the guest. A wonderful meal, a wonderful house, and one of those evenings that simply makes you happy to have been there.
