“Si estás en el baile, hay que bailar” means “if you’re at the party, you have to dance”, which is basically Argentina’s lovely long-hand for “when in Rome…”
l’ll be honest, there wasn’t a lot of dancing, but I embraced pretty much everything else the city could throw at me, including super-sweet croissants with ham and cheese, Malbec on a drip, mate (still not a big fan, sorry @juliandandrea !), standing/singing/swaying for six-straight hours at the football, and steak so bloody it could walk away. I even improved my Spanish.
