He didn’t go to culinary school.

In 2013, he fell out of love with academia and found himself on a sheep cheese farm in Canada.
Visiting India, he realised something missing — a country full of milk, but almost no artisanal cheese.
That question turned into a decade of work, helping shape how cheese is made and understood here.
