Sweet corn puree
Melt margarine, followed by diced onion, garlic and bay leaves, then sweet corn goes in, cook for 5min, add black pepper and blend
Melon seeds paste
Toast melon seeds and blend
Thin slice your plantain and fry, then plate as seen
We added basil oil: basically blended basil with a little water and cook on low heat for oil to form.
There was parsley and suya spice for garnishing
