What an experience at Kyoto bar Hachimonjiya by owner Kai Fusayoshi @kaifusayoshi Legendary and popular Kyoto photographer who developed a dive bar where you can immerse yourself in his craft. A place for this who seek 創造的無秩序 (creative anarchy?) Was great to connect with him. Purchased one of his books that was possibly his last copy. Still very much sad for him that he lost 2 million negatives in a fire in 2015.

@coffee_hanyakbang 커피한약방 Euljiro Coffee + Hanyak Known for their narrow alleyway location and their drip coffee which I felt was exceptional. Really tucked away. Sounds like the cafe will stay intact while the building beside it will be demolished and area redeveloped. #seoul #seoulcafe #coffeehanyakbang #dongbuxkorea

Superb dinner and tour @foxtrot.yyc This place is robust and will continue to grow in amazing ways. Everything was impressive - cuisine, spaces and hospitality. 🙏@foxtrot.yyc @spruce_meadows @matthias.fong @ally_huynh393 Milk buns with whipped mimolette cheese Smoked Old Fashioned Spruce Meadows Spritz @edgarfarms pea risotto with lobster, paired with Chardonnay Charcoal roasted sablefish (caramelized yogurt, brown butter snow, hazelnut crumb, grapefruit) Dry aged duck with foie, mustard & fig, paired with Pinot Noir Wagyu by @floating_stone_ranch dry aged in house, tater tots and three kinds of aioli, paired with a Super Tuscan Sea buckthorn tart and pineapples cooked on the rotisserie of the wood fire grill

Ugly Corn Bread @fortunas.row Sweet and savoury, rustic and golden, crumbly and crispy and so warm and comforting. A variety of textures and tenderness. The muffin pans and the toasted corn husk... visually so beautiful 🤩

@zest.seoul No. 2 bar in Asia No. 16 in the world 2025 Ranked by @50bestbars Minimalist vibes, zero waste and sustainability efforts well executed. Zest short for Zero-Waste. Excellent use of all Korean ingredients. Nice to be at a place dedicated to such core values. Took our chances as walk ins! The bars in Asia we frequented were super friendly and Zest was no exception. Really balanced cocktails and the flavours came thru as described. Nice of them to chill your cocktail if you need to step away.

2024.12.25 @yakitori_sei (焼鳥 清) Arakichō (荒木町) neighborhood in Shinjuku. A chic area with some tastefully designed restaurants, great atmosphere. Excellent experience minus the obnoxious American tiktok influencer next to us who had to narrate every bite. Staffing was lean, but the food was exquisite. Each dish carefully prepared as part of the 14 course omakase. Pace was nice, every bite was a revelation. Perhaps repetitive for chef, but the structure of the meal and the tradecraft was on full display. Love being the recipient of such experience and expertise. Thank you chef Takuma for the meal @toshikiuehara for the recommendation.

Gaeseong Mandu Koong in Insadong, specializing in North Korean-style (Kaesong region with agriculture roots) dumplings known for its fermented dough. 23 years ago I went to some place similar with my maternal side in the same area, but apparently it wasn't this place. Great aroma and depth of vegetable mandu guk and savoury flavour without it being heavy. Generous size of handmade dumplings, nice texture, milder tasting. We were chided a few times for not letting the jeongol cook long enough.

Seoul has a vibrant cafe culture. An exquisite first morning @artistbakery , a super popular salt bread shop, in the historic Jongno district, steps from Anguk Station. Was easy to get to. Sitting outside got us past the line quick. Near overwhelming choices. Still haven't wrapped my head around these bakeries as a culinary experience but it was fine. I suppose it's a fine mix of traditional technique and pushing the flavour boundaries.
