Together with with @bart.maeyens and @mastockett , @dorte.bagge talked about light, atmosphere, and the uniqueness of experiences. Drinks, appetizers, and an open exchange of thoughts - exactly where ideas comes alive.

During Milan Design Week, we gathered at @1930cocktailbar in a space that lives somewhere between reality and imagination. Together with @dunilightingsolutions , @stylttrampoli , @signifymycreation , and @farmilygroup , we explored how light, space, and taste shape the way we connect.
The Lobby co-hosted a conversation between @eriknissen , @benjicavagna and @dorte.bagge whilst uniquely made drinks and appetizers was shared between the guests in this secret place, surrounded by newly released portable lamps, setting a cosy atmosphere - like gathered around a fireplace.
Thank you to everyone who joined us, and made this night one of a kind. More than an event - a profound way of gathering.

/ Letter from Dorte
Karin Visth from the gourmet and Michelin-awarded restaurant KOKS spoke at The Lobby 2025 about the intriguing subject of how to keep culinary traditions alive in an ever-changing fine-dining industry. It sparked my curiosity — how do they actually live everyday activism in their work? So, I travelled to the Faroe Islands to see for myself. I visited both Karin and the founder, Johannes Jensen, to explore how they think and consider this perspective.
We met in their small cottage on the very last opening day of the season.I stood with Karin by the shoreline as she inspected the seafood, moments before it was pulled straight from the cold ocean and placed on my plate — locally sourced, authentic, and deeply rooted in tradition, reimagined in a modern artistic form.
Another unforgettable moment was the extraordinary dinner at Ræst, unfolding inside a 400-year-old farmhouse where you instantly felt as if you were sitting in a relative’s dining room. Intimate and cosy. Here, Mexican culinary traditions meet Faroese fermentation in a way that is both surprising and profoundly connected to this specific place.
Some of my key takeaways: Look to your local ingredients - and be proud of them. It anchors you in your community and is good for the environment, which we at The Lobby believes is worth investing in. For years, food in the Faroe Islands was heavily influenced by Danish cuisine, mirroring the same challenge seen in Greenland. Johannes has worked tirelessly to shift this narrative toward the local. We believe you should do things wholeheartedly, with effort and quality in mind. That’s what the Lobby stands for, and that’s what we encourage our partners and guests to do. Sometimes it’s better to simplify your concept or menu and focus on who you are, what the local area offers, and what your true priorities are. Being selective doesn’t diminish your value - on the contrary, it enhances it.
KOKS genuinely embody everyday activism, and I admire Karin Visth and Johannes Jensen deeply for it. My visit left me with plenty of food for thought; to look closer to home when I can, to be more conscious, and to make wiser, more thoughtful choices.
