The Ghost The Ghost is a high-concept, limited menu, pop-up Cocktail experience, located in New Jersey. This is an experimental series, with 6 cocktails that change themes location-to-location. This is not a full bar and none of the cocktails can be modified or off menu drinks can be made. Cocktails will range in a variety of novel garnishes, fresh ingredients and unique spirits. I am throwing my hat in the ring for the 2026 ITALICUS: Art of ITALICUS Aperitivo Challenge, inspired by Italian fresco restoration and the idea of preserving beauty while rebuilding it in a contemporary way. As a (well worn) bartender, I’ve spent years chasing technique, complexity, and perfection behind the bar. But over time, I started becoming more interested in restraint. In texture. In drinks that feel emotional instead of loud. Some of the most inspiring moments in my career weren’t in cocktail bars at all, but walking through museums, old churches, and historic spaces throughout Italy where age, damage, and restoration all existed together in the same piece of art. FRESCO was inspired by cracked intonaco, faded plaster walls, and the process of restoring Renaissance fresco paintings. I wanted to reinterpret the spritz the same way restorers reinterpret art preserving the original soul while introducing new life and perspective. The toasted rice cordial was created from leftover toasted Carnaroli rice and citrus peel trim, transforming overlooked ingredients into texture and elegance. Jasmine tea brings softness and structure, while prosecco keeps the cocktail bright, sparkling, and unmistakably aperitivo in style. The torched rice paper garnish represents fragmented plaster and restored surfaces, tying the visual presentation directly back to the inspiration. FRESCO SPRITZ 1.75 oz ITALICUS Rosolio di Bergamotto 0.5 oz Toasted Rice Cordial 1 oz Cold Jasmine Tea 3 oz Prosecco Superiore DOCG Served in a goblet over crushed ice with a torched rice paper shard. The cocktail is inspired by the beauty of restoration. Not covering age or imperfection, but allowing it to become part of the final piece. ---------------------------------------- Toasted Rice Cordial 1 cup Carnaroli rice 2 cups hot water 0.5 cup white sugar Pinch salt Peels from 1 lemon --- Toast leftover carnaroli rice in a pan until golden. Add the toasted rice to hot water, lemon peel, pinch salt, and allow it to steep. Fine strain, stir in sugar while still warm.
