Cocoa Strawberry Cream Sheet Cake The strawberries make their own syrup. 🍓 Let them sit with sugar for 15 minutes. That liquid? That’s your soak. Free flavour. Light cocoa sponge. Silky mascarpone cream. Fresh strawberries on top. ━━━━━━━━━━━━━━━━━━ 🍰 Cocoa Strawberry Cream Sheet Cake ━━━━━━━━━━━━━━━━━━ Cocoa Sponge 4 eggs · 140g sugar · 100g flour 25g cocoa powder · 1 tsp vanilla · pinch of salt Mascarpone Cream 250g mascarpone · 250ml cold whipping cream 60–70g powdered sugar · 1 tsp vanilla Strawberry Topping 400–500g fresh strawberries · 1–2 tbsp sugar Method 1. Whip eggs + sugar + vanilla → pale, airy ribbon stage 2. Sift flour + cocoa + salt → fold gently into eggs 3. Spread on lined tray · bake at 180°C · 10–12 min 4. Cool completely 5. Slice strawberries + toss with sugar → rest 15 min (they’ll release juice — this is your natural soak syrup) 6. Whip mascarpone + sugar + vanilla until smooth Add cold cream → soft-medium peaks (don’t overwhip) 7. Brush sponge with strawberry juices 8. Spread cream evenly → spoon strawberries over top Drizzle remaining syrup for shine 9. Cream butter + sugars → add egg, zest, vanilla 2. Fold in dry ingredients + apricots → chill 30–45 min 3. Scoop ~60g · bake 175°C · 10–12 min (edges set, centres soft — don’t overbake) 4. Save this recipe for your next dinner party 👇 INGREDIENTS Chocolate Tart Shell * 1 pre-baked chocolate tart shell (20–22 cm) Nut Praline Layer * 150 g hazelnut or peanut praline (smooth, spreadable) Chocolate Peanut Ganache * 200 g dark chocolate * 200 ml heavy cream * 2 tbsp peanut butter * Pinch of salt Chocolate Nut Whipped Cream * 250 ml heavy cream * 2 tbsp hazelnut or peanut paste * 1 tbsp powdered sugar * 1 tbsp cocoa powder Finishing * Extra praline (for dots) * Fresh roasted nuts * Cocoa powder (optional dusting) INSTRUCTIONS Place pre-baked tart shell on a flat surface. We spent 7 days in the Amazon rainforest and Day 5 took us deep into a Tsimane cacao community 🌿🍫 We met Simón and Jorge, walked through their peaceful village, crossed streams with camera gear, and saw how they grow and dry their cacao in the forest. From tasting fresh beans to discovering sweet pacay fruit, it was one of those days that puts everything into perspective.
