Part 3: The Scoring Process After the final shape in part 2 we placed the dough in the fridge for an overnight cold bulk. In the morning I placed the dough into the freezer for 45mins as the oven preheated to 500 degrees. Freezing the dough will buy me a little more time to do such an intricate score. 30% sprouted khorasan from @onedegreeorganics is so good, you guys. So fluffy, creamy, mildly nutty. I hope you give it a try and gift a Valentine loaf! Ingredients: 210g @bobsredmill artisan bread flour 90g @onedegreeorganics sprouted khorasan flour 240g hydration / 80% 60g levain / 20% 8g pink himalayan sea salt / 2.6% Method: Dissolve salt and levain in water until milky, then mix in flours into a shaggy dough. Rest 15m Stretch & fold, rest 30m Coil fold, rest 45m (repeat 2 more times) Rest undisturbed until dough has approximately doubled in size Shape into proofing basket Cold proof 17hrs Bake in preheated covered dutch oven at 475F for 30m, remove lid and reduce heat to 420F for 10m.
