Our akaushi beef is always on pasture, rotating to new grasses multiple times per month. The breed and the pasture management lend to the marbling, tenderness, and wonderful flavor. Stop by our West U market every Saturday from 8-12 to pick up a premium steak or ground beef!

This photo takes us all the way back to our first season. Our original market had 3,600 square feet of bed space. Since then, we’ve expanded the garden and now have close to 10,000 square feet of bed space. It’s images like this that remind us how much we’ve learned throughout this journey, and just how enjoyable vegetable production can be.
Our beef tallow is made on the farm using 100% of our pasture raised beef fat. It is triple rendered, and has a high smoke point, making it ideal for seasoning cast iron and frying at high temperatures. Tallow is a great replacement for butter or oil when cooking. You can pick up a jar at our weekly farm stand in West U, in our retail shops, and online.
Of all the products we produce, tomatoes are by far one of the most anticipated each year. We are diligently caring for over 600 tomato plants this year and are excited to see those first blossom sets turning into fruit. We’ll be swimming in heirlooms and cherry tomatoes throughout the end of May – early July.
