Street Feast is almost here 🙌 To celebrate, Eunice is bringing a dish that’s fresh, vibrant and perfect for sharing with your neighbours.
Golden honey chicken thighs, crisp salad, creamy yogurt herb dressing — simple, delicious food to enjoy with good company🌿
Ingredients 🥗
For the chicken:
840g boneless, skinless chicken thighs, 2 tbsp extra virgin olive oil, 1 tbsp lemon juice, 2 tbsp honey, sea salt and black pepper
For the salad:
1 head iceberg lettuce (sliced), 400g cherry tomatoes (halved or quartered), 240g radish (quartered), 1 red onion (finely sliced), ½ cucumber (peeled, seeds removed), 150g mixed olives, 200g feta cheese (crumbled), fresh parsley and mint, toasted pitta to serve
For the yogurt herb dressing:
250ml Greek yogurt, 2 cloves garlic (finely grated), juice of 1 lemon, fresh dill and parsley (finely chopped), sea salt and black pepper
Method 📋
- Preheat the oven to 190°C. Combine the chicken with olive oil, lemon juice, 1 tbsp honey, salt and pepper. Leave for 10 mins to take the chill off.
- Sear the chicken in batches for 3–4 mins each side until golden. Transfer to a lined baking tray, drizzle with the remaining honey and a pinch of salt. Roast for 15–20 mins until deeply golden and cooked through.
- Mix together the yogurt, garlic, lemon juice, dill and parsley. Season well. Add any leftover pan juices to the dressing.
- Combine the lettuce, tomatoes, radishes, red onion, cucumber, olives and feta. Spoon over the dressing and toss gently.
- Arrange the warm honey chicken thighs over the top and serve with toasted pitta.

Summer in a glass 🍓🍋
Our Strawberry Lemonade mocktail is officially Street Feast approved. Here’s how to make it at home:
300g strawberries, hulled
6–7 lemons, juiced
1.5L water
100–200g caster sugar
1 tsp sea salt
- Blend strawberries with 50g sugar and 120ml water until smooth. Sieve into a large jug.
- Add lemon juice, remaining sugar, salt and water. Stir well and adjust sweetness to taste.
- Chill in the fridge for 30 mins.
- Serve over ice with fresh strawberry and lemon slices. Enjoy!

Little Helps Brilliant Broccoli Quiche 🥦
Ingredients
1 tbsp Olive Oil
6 Medium Free-Range Eggs
250g Filo Pastry Ready Rolled Sheets
1 Bunch Spring Onions
55g Mature Irish White Cheddar
1 large Courgette
300g Broccoli
Method
— Preheat the oven to gas 6, 200°C, fan 180°C. Finely slice the spring onions, cut the broccoli into small florets, grate the courgette and grate the cheese.
— Line a baking tray with nonstick baking paper, brush with olive oil and lay in the filo pastry sheets, easing them into the sides.
— Crack the eggs into a large bowl, season well and beat together.
— Add the spring onions, courgette, broccoli and cheese to the egg mixture and stir to combine.
— Pour the filling into the pastry case and spread out evenly.
— Bake for 35–40 mins until golden and just set. Allow to cool for at least 15 mins before slicing and serving.

Serves 4
For the fries:
1kg frozen chips
For the beef:
500g minced beef
1 tsp salt
1 tsp black pepper
1 tsp garlic granules
1 tsp onion granules
For the toppings:
80g gherkins, chopped
150g cherry tomatoes, halved
80g little gem lettuce, shredded
150g Tesco Burger Sauce
1. Cook the chips according to packet instructions until golden and crispy.
2. While the fries are cooking, heat a pan over medium-high heat and add the minced beef. Break it up with a spoon and cook until browned and fully cooked through. Season with salt, black pepper, garlic granules and onion granules.
3. Transfer the cooked chips to a serving dish. Spoon over the hot minced beef.
4. Add the chopped gherkins, diced tomatoes and shredded lettuce.
5. Drizzle over the Tesco Burger Sauce and serve immediately.
