Crispy on the outside, creamy on the inside 🤤 This béchamel ham sandwich is pure comfort quick, simple, and sooo good! Ingredients • 2 slices of wholemeal or white bread • 20g butter, melted • 100g grated Gruyère cheese • 4 thin slices smoked ham For the béchamel sauce: • 125ml milk • 20g butter • 20g plain flour • (optional: pinch of nutmeg, salt, and black pepper to taste) Instructions 1. Make the Béchamel Sauce 1. In a small saucepan, melt 20g butter over medium heat. 2. Stir in 20g flour and whisk for about 1 minute to form a smooth roux (it should look like a paste). 3. Gradually add 125ml milk, whisking continuously to avoid lumps. 4. Cook until thick and smooth — about 3–5 minutes. 5. Season lightly with salt, pepper, and nutmeg (optional). Set aside. 2. Assemble the Sandwich 1. Brush and preheat the pan over medium heat. 2. Lay the bread slices on the pan to warm slightly. 3. Spread a thin layer of béchamel sauce on one slice of bread. 4. Prepare the fish: Clean the tilapia thoroughly and score both sides. 2. Make the marinade: In a bowl, combine ginger, garlic, mustard, all-purpose seasoning, salt, black pepper, Cajun spice, lemon juice, and Tedia Kitchen Green Seasoning. 3. Season the tilapia: Rub the marinade all over the fish, including inside the cavity. • Cover the tray with cling film and refrigerate overnight, or let it sit at room temperature for 15–20 minutes. 4. Cook the fish: Heat a little oil in a pan over medium heat, or grill the fish. Cook until golden brown and cooked through (about 5–7 minutes per side, depending on thickness). Remove from the pan and set aside. 5. Prepare the vegetable sauce: In a little oil, sauté onions until golden. Add green and yellow peppers and cook for 1 minute. Stir in fresh ginger, scotch bonnet, and Tedia Kitchen Green Seasoning, cooking for 30–50 seconds. 6. Combine: Add the cooked fish back into the pan, spooning the vegetable mixture over and into the cavity. 7. Serve: Arrange the tilapia on a serving plate and garnish with your choice of condiments and sides. Share and enjoy!

This Chicken & Feta Salad is the perfect balance of healthy + delicious 💚🥗 Only at Tedia Kitchen 🌿 Ingredients (serves 2–3): • 1 medium lettuce (washed & chopped) • 200g cherry tomatoes (halved) • 1 cucumber (sliced or diced) • 1 avocado (diced) • ½ red onion (thinly sliced) • 100g feta cheese (crumbled) • 1 chicken breast (grilled or pan-fried, sliced) • 100g sweetcorn (cooked or canned, drained) • 100g peas (blanched or thawed if frozen) Dressing (optional): • 3 tbsp olive oil • 1 tbsp lemon juice (or balsamic vinegar) • 1 tsp honey or mustard • Salt & black pepper to taste Method: 1. Cook the chicken breast: season with salt, pepper, and a little olive oil, then grill or pan-fry until golden and cooked through. Slice it. 2. In a large bowl, layer the lettuce as the base. 3. Add cherry tomatoes, cucumber, avocado, red onion, sweetcorn, and peas. 4. Scatter over the feta cheese. 5. Top with sliced chicken breast. 6. Greens don’t have to be boring 💪🥬 Here’s a quick way to enjoy spinach that’s healthy AND delicious 😋✨ 🌿 Tedia Kitchen Spinach Recipe Ingredients • 3 tbsp palm oil • 1 green bell pepper 🫑, chopped • 1 onion, sliced • 2 cloves garlic, minced • 1 scotch bonnet, (adjust to taste 🌶️) • 2 spring onions, chopped • 1/2 of Dried basil leaves • 1 tbsp Tedia Kitchen green seasoning • 500g fresh spinach • Salt to taste Method 1. Heat palm oil in a pan over medium heat. 2. Add onion, green bell pepper, and spring onion, then cook for 2–3 minutes. 3. Stir in garlic and Tedia Kitchen green seasoning, sauté until fragrant. 4. Add spinach and cook until wilted (about 5 minutes). 5. Add fresh basil leaves for aroma and taste. 6. Stir in salt and bay leaves, then let it cook for about 3 minutes. (✨ Tip: Do not cover the pan if you want the spinach to stay vibrant green.) 7.
