Concrete Food
A standing dining experience designed to connect guests with ingredients from the earth through tactile interaction and communal engagement. The presentation embraces a brutalist aesthetic, aligning with the spirit of Nexart Market, where artists present their work in a direct manner. This echoes the process of grocery shopping—sourcing ingredients from diverse places and preparing them with care.
Following the introductory performances, guests are invited to explore several food stations:
Bread sculptures with hummus
Concrete-look black sesame butter with charcoal crackers
Rice paper with miso, mushroom, and coffee gel, or nori, shaded in grey
Self-service serigraphy with beetroot hummus on lavash
Concrete fudges and citrus fruit gums
Chaotic candle soil with caramel and dried apple slicesBrutalist molly cake with tonka, roasted almonds, and whipped ganache
