Long lunches. Sun-drenched kitchens. Wine flowing. Hands deep in flour. This June, I’ll be returning to Potentino, cooking in a Tuscan castle, rubbing shoulders with some remarkable chefs, and I’d love you to join us. It’s my first one there in the summer, so I’m excited to see what’s in season, and to swim in the pool. I’m so excited to be one of the guest chefs for Cucina Povera VI at Castello di Potentino. This is not your average cooking class. It is a hands-on, immersive weekend where we cook together, eat together, and share our stories of all things food. I’ll be joined by an incredible group of chefs: Cherie Denham from Ireland Sushil Dwarakanath from India Ana Ortiz from the Galapagos and Ecuador Together, we’ll explore cucina povera. Simple, seasonal cooking rooted in tradition, creativity, and making something beautiful out of very little. Before the weekend begins, I’ll also be leading a special Japanese fermentation workshop from Monday, 15th to Thursday, 18th June 2026. We’ll dive into fermentation techniques, flavour, and the techniques and processes behind some of my favourite ways of cooking. What I love most about the Cucina Povera weekend is that it is not about sitting back and watching. We all will be in the kitchen, learning, tasting, and creating. We’ll then sit down together for long, relaxed meals with wine, conversation, and the satisfaction of having cooked together, something super tasty from real ingredients. 18 to 21 June 2026 - 3 nights, 2 full days of cooking, eating, learning and living it.
