Our 020 Martinez is inspired by the centrum of Amsterdam — a deeply historic place, filled with iconic architecture and picturesque canals.
With this drink, we looked at everything the Dutch gave to the world during their Golden Age — global trade, architecture, the arts, social living, even capitalism. Then we flipped it, and thought about what they kept close to themselves — the things you still find tucked into the cracks of the city.
The drink focuses on two of those — jenever, which sits right at the heart of Dutch drinking culture, and drops — or liquorice, as it’s more commonly known.
We bring those together in something that stays very true to a classic Martinez. Jenever forms the base, vermouth is still the driving force — but we make our own, layered with Dutch flavours, including that signature liquorice note.

Our All Stars menu is basically a selection of drinks we couldn’t let go of — packed with all the deliciousness from previous menus, or little twists we’ve done on classic cocktails, like our Espresso 61.
It’s built on a blend of vodkas, using both rye and wheat to give it a bit more depth and texture. You’ve got your classic espresso in there, but the special part is our kvass syrup, made with rye bread and IPA malt extract, which basically takes an Espresso Martini and puts it on steroids.
It ends up tasting more like modern-day coffee — not overtly bitter, but with a gentle acidity, and all the brightness you’d expect from a really high-end coffee shop, with added booze!

On May 27th, we’re welcoming bartenders from Dublin’s most-awarded cocktail bar, the staunchly Irish and fiercely independent BAR 1661, founded by poitín aficionado Dave Mulligan.
With a vision to lift Irish cocktail culture to new heights, the team has swept up nearly every national bar award going, and been shortlisted at Tales of the Cocktail a whopping four times.

Our Espresso Martini ‘61 uses a vodka blend — Ketel One and Belvedere — the former made from wheat and the later from rye, for a rich base.
Instead of coffee liqueur, we use a homemade kvass syrup made from rye bread and IPA malt extract, which brings a super rich flavour profile with a gentle sour finish – also available without the booze!

🍌Bananas, tomatoes, bubbles and brine! For the Concrete Spritz, says Andy, we looked at two defining elements of Noord district — concrete and spray paint, and how we could translate those into flavour.
We took some inspiration from a Dandelyan classic, the Concrete Sazerac, using a similar idea of incorporating calcium carbonate. In this case, it’s used to de-acidify and clarify tomatoes, forming the base of the drink — a mineral tomato wine-base.
The second component is the spray paint. We looked at Haribo banana gummies, specifically isoamyl acetate — the compound responsible for that distinctive banana flavour. These are steeped into a classic Amsterdam-style brine, creating a super tasty banana pickle brine.
Andy’s favourite part of the drink is the journey it takes you on — a couple of flavours from the banana pickle brine, then tomato, and then you sit there for a moment, wondering what just happened.

Concrete Spritz — the story!
The Noord district is very different from the rest of the city. It was never part of any official plans to house people, but when the shipyards were abandoned in the early 20th century, people started moving in — mainly squatters — and with all the empty warehouses, it became a space for expression and street art.
So we looked at two key elements — concrete and spray paint. By clarifying tomatoes (naturally high in acetone) with ‘concrete’ and combining it with Haribo Bananas (closer to spray paint than to real bananas — isoamyl acetate!), you get a tasty spritz that represents the borough perfectly.
At first, you get those soft, almost creamy banana flavours — and then it rolls into something greener and umami.

An easy hop, skip and a jump from the bar, Noord has grown in a way that sets it apart from most of the city’s boroughs.
In place of canal houses, there are towering industrial spaces and brutalist architecture. Amid this raw, concrete backdrop, artsy cafes, craft breweries, and creative spaces are flourishing in repurposed buildings. Where others see empty space or abandoned structures, Noord’s residents see a chance to leave a mark!
We’ve taken these two key components in the story of Noord — concrete and spray paint — and applied them to this tangy, bright serve.
