On Mezcal Mondays, let’s talk terms:
Espadín or joven translates to “young” and tends to be unaged or very lightly rested. It’s mezcal in its cleanest form, focused on smoke and sharpness and the plant itself 🌿
Reposados are aged from 2-12 months in oak and tend to have rounder edges with more vanilla and baking spices 🧉
Añejos are aged for over a year, the mezcal for whiskey drinkers. The agave is less sharp and the taste is more caramel and oak-forward 🥃
Then we have the wild family— the Tobalás, Tepeztates, Madrecuixes— that are harvested from wild or semi-wild agave, and tend to be funkier and more complex. These plants can take years or decades to grow and can range from spicy and electric to green and structured 🌶️
