Ramps.
Had a guest wondering about ramps - aka wild leeks/garlic, spring onions - today. Here are a few thoughts…
Garnish - finely chopped over any salad, goat or feta cheese, pasta, grilled/roasted meat/fish
Wilted/lightly sautéed - in pasta, risotto, over polenta
Baked - into a frittata or quiche, potato gratin
Pesto or Vinaigrette - so yummy in either
They are a fleeting taste of Spring. Delicate alliums that remind us of the retreating cold, the damp/rich/rested soil, the woods, and the newness of this season.
