First taste is in the cup! Our green coffee from Hawari Yemen has arrived and it sure is a unique cup. For those who have tried our Sumatran, imagine a thinner, spiced version of our Sumatran coffee. This coffee is incredibly rare, and we obtained a limited supply. We are selling WHOLE BEAN ONLY. 12 OZ ONLY. $30 for a 12oz bag. While piping hot, we tasted toasted sesame and and faint cinnamon notes with fresh citrus zest. The coffee has a mouthfeel texture similar to milk, it coats the mouth with a smooth buttery mouthfeel. As the coffee cooled, it retained a foral spiced note each time we raised our mug for a sip. The coffee is a bit thin while just off the pour, but it quickly establishes its base after cooling just a few degrees. We roasted a solid medium roast, and just off roast it is a low acidity cup with some dark almost campfire notes. Those notes should develop into bittersweet chocolate in a few days, but we will keep everyone posted! This is our first sip. Our First Reserve Offering: An exceptional specialty coffee from Yemen. That’s right, Yemen, where bombs have been falling! Fortunately, this growing region has not been impacted at this time. Grade 1 with a Cupping Score of 87.9. The body broke the score, maxing out at 10/10. Spice notes, dark chocolate, and a few fleeting hints of roasted pumkin seed. The general marketing message of most coffee roasters is that fresh is best, and of course that is true. However, we appreciate the nuances. Most coffees taste best 3 days to 2 weeks after roast. We do not recommend keeping more than a one month supply of fresh roasted coffee, sit on it too long and flavors start to recede. Add the effects of slow oxidization and old coffee begins to develop unpleasant bitter notes. Some coffees on day of roast will taste almost flat. However, some coffee get crazy wild right off the roast. Kenyan natural coffees come to mind. On day of roast, their flavors are far from center and can be incredibly bright to the point of unpleasant. Even after a week, high scoring Kenyan naturals keep a bright acidity that is so strong one finds enjoyment elusive. However; give one of these coffees 2 to 3 weeks, and the brightness and grainy wildness reduces, allowing some very wonderful flavors to emerge. We recently experimented with roast profiles and found a new area of the Sumatran that we love! You can now order as Dark Roast (which is amazing in an espresso machine) or Medium/Dark (which makes awesome drip pot coffee)

We sent out several samples this week, looking forward to the feedback! Roasting Dark Roast Sumatran Off Cycle this weekend. This coffee has unique natural oils in the cup that are brought out by the dark roast profile, absolutely delightful!
