Wait for it! … Bierstachein, or beer poking, is a traditional German practice dating back centuries. A stachel, or heated rod, is plunged into cold beer triggering a Maillard reaction caramelizing residual sugars and creating a creamy toasty foam, while the beer keeps cool. We’re hosting two sit-down nights to launch our new ramen series: Clarity — an exploration of depth without heaviness.
We begin with a clarified tonkotsu, finished with botan ebi — precise, delicate, intentional.
To open the evening, guests receive a rice lager taster + a hamachi opening bite, paired thoughtfully — with the brewer from SUGOI Brewing Company on hand to share the pour — and included with any ramen order.

Happy Winter Solstice. After the shortest day, the days become longer, and is said to bring a rise in positive energy. A Chinese tradition is to eat tang yuan (湯圓) glutinous rice balls, often with a filling. (I just used what I had laying around to make from scratch. No black sesame, which is more common, but white sesame will do.)
