Around this time last year @subrosabakery had an awful fire that forced them to shut their doors. But their resilience, positive attitude and love for their community and craft kept them going. It’s been a privilege to follow Evrim and Evin through this process and document their reopening!

It’s been exactly 4 months since we opened our doors and we couldn’t have done it without @corinthianconstructionrva . We have been wanting to give them a shout out for some time but this was eclipsed by the whirlwind of reopening the bakery! Much of the behind the scenes work required to resurrect a destroyed building can get overlooked but suffice it to say we wouldn’t be here without the care, attention, and effort of the Corinthian team. From putting on a new roof to moving a 2,500 pound mixer dropped in the middle of the road (by another company) to dismantling a brick oven and installing a 4 deck electric one, Shaun and the @corinthianconstructionrva team really transformed our space into what it is today. Infinite thanks to this awesome team for making it all happen!

We have to take the time to shout out two of our own, @doguevin and Baker Seamus for the hard work they’ve put into this beautiful panettone this year! It’s been a roller coaster ride, to say the least, that they’ve seen through with so much attention, care and skill. Thanks to the two of them, we now have in bakery…..
