THE SUMAC BLT. A SANDWICH THE SIZE OF YOUR HEAD (NOT THAT SIZE MATTERS OR ANYTHING) Not a small sandwich. It was never going to be. Built on our OG sourdough - a loaf roughly the size of someone’s head. A two handed, no eye contact, unless you want eye contact and you’re into that, full attention required kind of situation. Nolen Gur bacon. The Bengali sweetener that has no business being this good in a BLT but here we are. Pickled jalapeños for the heat that sneaks up on you. Garlic aioli. Sumac aioli - because the aioli needed two entries on this sandwich to make its point. Bold. Balanced. Now - the sumac courtesy of @mishkah.ae keeping Palestinian farmers generational agricultural traditions alive. Every pinch of sumac on this sandwich carries that story. Earthy. Tangy. Citrus forward. A spice that has been growing wild across the hills of Palestine for centuries. It cuts through the richness of the bacon, lifts the acidity of the tomatoes, and makes the sourdough taste more like itself. Swipe to the second last slide. THE TIKKA BENEDICT. HOW IT HAPPENED. We were told this wouldn’t work with Chicken Tikka. Which is exactly why we put it on the menu. Pulled Chicken Tikka - marinated, charred, carrying the memory of every tandoor it has ever known. Two organic poached eggs. Sitting exactly where they should. A Makhani style desi sauce that made hollandaise reconsider its life choices. Fried onions for the crunch nobody asked for but everyone needed. Mixed greens and cherry tomatoes to keep things honest. And underneath all of it - a Kouign Amann croissant base. A Breton pastry that wandered far from home. Caramelised at the edges. Holding three culinary traditions together without breaking a sweat. Consider this a cultural repatriation. Served with a poached egg. Hollandaise met Tikka. The Subcontinent won. As it should. The Tikka Benedict. Now at Subko, Alserkal Avenue for dine-in. THIS CANNOT WORK - CHICKEN TIKKA EGGS BENEDICT Eggs Benedict has a history that is, depending on who you ask, either very New York or very contested. The kind of breakfast that demands a white tablecloth and a Sunday morning with nowhere to be. Eggs Benedict was always missing something. Turns out it was us with our butter chicken gravy. We were told (assertively) this wouldn’t work with Chicken Tikka. Not just by one person. By many. Including every purist who looked at our menu and asked why we would do this to a brunch classic. Guess what? Now they’re asking if they can get a second one. That’s the thing about Chicken Tikka. It has always found a way. From the tandoors of Punjab to the curry houses of Birmingham to the dinner tables of every desi household that treated it as both weeknight staple and celebratory centrepiece. It has always belonged everywhere it has landed. This is just the latest place it decided to make itself at home. A perfectly poached egg. Chicken Tikka with the char and the spice that earns its place. Served on a base that holds the whole thing together without apology. Benedict met Tikka. The Subcontinent won. As it should. Is it brunch? Is it subcontinental? Whatever. It’s Sunday sorted. The same flavours you’ve known your whole life, reimagined for a plate you didn’t know you needed. The Chicken Tikka Eggs Benedict. THE YELLOW YOUR AUNTIE’S FLOOR HAD. There’s something that happens when you walk into Subko and look at the first bar downstairs in our Taiyaar section of the Craftery. Yellow oxide flooring has been part of South India’s built heritage for generations. Eco-friendly before eco-friendly was a brief. Durable before durability was a selling point. Made from natural iron oxide pigments, it kept homes cool, aged gracefully, and required nothing more than a mop and time to maintain. And yes, for those who grew up with it, there was always that one auntie who was deeply unhappy about the yellow that transferred onto the soles of your feet. A small price. Worth every step. At Subko, Alserkal Avenue, the yellow oxide counter at the Taiyaar bar is continuity. A material that has always understood what good design means.

WHO KNEW GETTING NEON SIGNS WOULD BE THIS HARD. Everyone said getting a proper neon sign made in Dubai wasn’t possible. That it was a bad idea. That we should just do an LED panel and move on. Obviously we didn’t move on. Some Like It Hot isn’t just a sign. It’s a statement about what happens behind the glass. A hot kitchen that runs on craft. On flavour interventions from the Subcontinent. On a quiet refusal to do things the easy way. The sign glows. The kitchen delivers. And to the same people who said it couldn’t be done - and then proceeded to break it - we see you. We know exactly who you are. The sign is not a handle. It is not load bearing. BISHESH HAS A BONE TO PICK. WITH THE MOMO. FOR THE COFFEE. Ask anyone what Nepal is known for and you’ll get the same answers. Everest. Trekking. Momos. Although Nepal has been sitting on one of the most underutilised specialty coffee stories in the world. Not enough people are saying it out loud. We are. And so are Bishesh ( @bishesh_thapa )and Subash (@subas__lama ) Two senior baristas. Both Nepali. Both deeply invested in what their country’s coffee is capable of. Both quietly tired of it being an afterthought in a conversation it should be leading. Nepal grows coffee at elevations that most producing regions cannot reach. The altitude slows everything down. The result is coffee that is distinct, traceable, and worth the attention it has rarely been given. Nepal’s coffee culture deserves the same pride, the same recognition, and the same global conversation as its mountains. Bishesh and Subash are here to make that case. One cup at a time.
