**Ingredients:**
* 8–10 jalapeños (halved, seeds removed)
* 150g brie cheese (cut into small cubes)
* ½ cup blueberry jam (or fresh blueberries + 1 tbsp honey)
* 4 oz cream cheese (softened)
* 1 tbsp honey
* ½ tsp chili flakes
* ½ tsp garlic powder
* Salt (pinch)
* ½ cup breadcrumbs (optional for crunch)
* 1 tbsp olive oil
**Instructions:**
1. Preheat oven to **190°C (375°F)** and line a tray.
2. Mix cream cheese, honey, chili flakes, garlic powder, and a pinch of salt.
3. Stuff each jalapeño half with the cream cheese mixture.
4. Add a cube of brie in the center, then top with blueberry jam.
5. Sprinkle breadcrumbs and drizzle a little olive oil on top (optional).
6. Bake for **15–18 minutes** until bubbly and slightly golden.
7. Let cool slightly and serve warm for that perfect melted center.

Main Layers • 2–3 medium beets, roasted or boiled, peeled and sliced into rounds • 120 g blue cheese (such as Roquefort, Gorgonzola, or Danish Blue), crumbled or sliced • 1 ripe pear, sliced lengthwise into thin wedges • A handful of walnuts, lightly toasted • Fresh thyme or microgreens for garnish
Balsamic Glaze • ½ cup balsamic vinegar • 1 tbsp honey or maple syrup
Optional Dressing • 1 tbsp olive oil • ½ tsp Dijon mustard • Squeeze of lemon juice
