Did you know that we have never taken a professional picture of our food? Seems silly, but almost every picture we have ever taken was of a customers meal, right before we served it to them. (This will change in the future, but you bet you shorts that we will use a local photographer when we finally decide to go legit!) Why does this matter? It doesn't really. But one thing you can take away from this, is that we work very hard daily to always serve our best product. It should look, smell and taste amazing every time. This is what separates us from the others. You will get a premium product, made with premium ingredients. Served fresh and piping hot right off the griddle for you to enjoy! Do we make mistakes and miss the mark sometimes? Absolutely. But we do everything we can to ensure that our standards will be met on the regular, and you will be the recipient of a high quality burger, cheesesteak, salad, etc. Family owned and operated. Cheesesteaks can taste so different from shop to shop. Yet almost all of them have the same exact ingredients. 1. Amoroso rolls - Any self respecting cheesesteak shop will almost always use real Amoroso rolls. There is just something about them that cannot be replaced with standard rolls. 2. Cheese - This one is debatable. Traditional shops use Provolone or cheese whiz. We feel like these 2 options are nasty. White American is our choice because it gives that similar mouth feel to cheese whiz, but it just plain taste better. Bring the hate on this! 🙂 3. Meat - This is where it varies a lot. Many shops use that ugly block of frozen chopped up mystery meat. It is usually sirloin or very low grade ribeye. The meat block is easy to store because it is frozen. Literally 0 food waste. Very protective of margins. This is where we differ! We buy whole ribeye and go through a tedious and time consuming process (We very much do not enjoy it!) to hand shave them with a deli slicer. Thin but not too thin. As to preserve the meats integrity, but still thin enough to allow the meat to chop up on the griddle nicely. It's definitely a balancing act. We spice the meat with our blend of spices, which gives it the flavor profile that you enjoy so much! We really hope that you taste and feel the difference in the quality of the product, because it sure is a bunch more work to make it happen 🙂

Many of our regulars remember the birria days, but for those of you that hopped on later in our food truck days, may have absolutely no idea why our birria is a big deal. I have been asked many times, "What makes your birria better? or What makes it so good?" Well, the answer is simple. It's complex. A lot of restaurants will will cut corners when it comes to birria. Why, you ask? Because it's HARD. It's time consuming. It's ingredient intensive, and the prep for those ingredients takes a long time. Unless of course you buy some random "Birria bomb" and add water. Even then, you are in for a 10 hour braise. Once the braise is done, you break down the meat and separate the Consomé and fat. Store all ingredients separate and transport as a messy stew (If you are a food trucker at least.) For our birria cooks, we add 10 QUARTS or high grade ingredients to every cook. And I'm not talking about water. Chilies, chilies and more chilies. And then add a few more. Toasted to perfection and then steeped to soften and bring out the flavor. TONS of Mexican spices. Combined and blended and braised into our meat of choice until the meat is a perfect consistency. This is the "Love" aspect. The part that is most commonly omitted. Why? Because its one of the few steps of a very complex and long process that can be omitted to save on a few steps during a very long day. This right here is the biggest mistake that any restaurant can make. In our opinion, you may as well not serve birria at all if you don't get this part right. So now here we are, after a complete average work day is complete, and we are finally ready to put a 8-12 hour work day in to serve our favorite people. You. We hope you enjoy eating our rendition of birria as much as we respect the process of making it. After all that, many people have asked me why we chose to quit serving it as a food truck. Well, see above :)

We are feeling a bit ambitious this week. We are releasing a new menu item, as well as a limited run on our most popular special. Our new menu item was inspired by a customer request, and we liked it so much that we threw it on the menu and gave it a name sake. AKA "The Don". Take our standard grilled cheese on an inverted Brioche bun. Slap some hand carved Angus Ribeye and caramelized onions with premium white American cheese, and you end up with one killer sandwich! And if that is not enough, we will be doing a limited run on our insanely popular special "Ribeye steak bites over Fries". This week, we will offer our standard Angus ribeye steak bites as well as PRIME grade ribeye steak bites for a few bucks more. It's certainly not cheap, but one thing is for sure. You get what you pay for, and we would put our steak bites up against any high end steak house around. And it will be 1/3rd of the cost! Come see for yourself. Soon we will be pulling up to 105 West Brewing Company with our Stack'd trailer to serve some our latest hits! We have a lot of stuff going on, so we have not had enough time to perfect a few specials that we are very excited to bring to you. Until then, we have added Carne Asada Fries and Nachos to our menu. Good morning! The Stack'd family will be making 2 appearances this week. Today, we will have the Stack'd trailer at 105 West Brewing Company. We will be serving all your favorite Birria entrees. Tomorrow we will be at the new Living The Dream Brewing Co. location (The old Grist location in Highlands Ranch!) with our new Crave'N Food Truck . Crave'N will be serving up our crazy popular Smash Burger, Steak Bites, Chicken wings, and more! So if you cant decide which menu you want more, come to both. We wont judge :)
