I take a lot of photos. 📸 I take photos of things I think are beautiful to me. I take photos of occasions and events so I remember them always. I take a lot of travel pictures (in case you haven’t noticed 🙄). I document things in my daily life, friendships, joyful things, Henry’s lunchbox, so I can revisit them in my mind. Today, among other things, I baked these savory Parmesan and chive scones, and I want to remember them. I also went to a great new restaurant with my beautiful friend of 50 years last night. I wore my favorite shoes and I drank a lot of Chablis. In between travel, I baked that delicious #rhubarb custard tart. It’s simple and luscious (uses sour cream), and just the perfect slice with coffee. Rhubarb is here for a hot minute….. so go and get some and make this cake. Recipe is on my website. Let’s go! 💃🏼🌸 #staceybakes
About last night. Thank you to everyone who came out last night to my spring Mother’s Day event at J McLaughlin. It was such a fun night. New friends and old friends, and a surprise visit from one of my travel friends who lives an hour away!!! 💃🏼I made a wonderful pea, leek ricotta frittata (I will post the recipe) and a delicious beet hummus. Everything was devoured, and finally people got to try my famous focaccia!!!! Thank you to everyone who always supports me, buys the products, goes on the trips with me, and looks at my oversharing on this platform. Eggplant “Parm”, as we call it in New Jersey, could be my number one favorite food if made right. I hate mushy eggplant. My friend Geraldine makes it the best. My friend Missi and I grew up loving the burn on our gums from the vegetable, if that makes any sense. 🤔🔥🫦 I could eat the whole pan myself. Here I’ve been making it on a sheet pan and it’s just so good. Fry up your eggplant slices with flour, egg and breadcrumbs. Then lay them on a sheet pan with your favorite tomato sauce. Here, I did just a simple Mutti canned cherry tomato sauce that I made. Top with some oregano, fresh mozzarella, basil, and put under the broiler for a few minutes. It’s revolutionary! ❤️🍆 #eggplantparm LFG!!

Best day ever in Andalusia at the Hacienda with @stirredtravel . 🇪🇸. We cooked with fire today with the talented chef @anaortiz_chef and then an after dinner surprise, all the ladies got dressed up and had flamenco lessons!!! 🥰💃🏼🔥❤️ let’s go!! The BEST!!
Day trip with @stirredtravel and @pureandalusia to Jerez de la Frontera 🇪🇸. The best food, and a sherry tasting, I think I’m pickled, I’ve had so much to drink 🤪.
