Welp, the cat’s outta the bag! Finally pulled the trigger on my first pop-up and am grateful for the love and support! It’s been an emotional ride getting Maxine’s to this point and I’m excited for what’s to come.

Welp, we finally did it!
So grateful for my wife, my friends & family, and this life. Immense gratitude.

Typically I’d do a braised brisket of sorts for Rosh Hashana however my oven decided to shit the bed and I had to get creative. Scored some large-format short ribs at my local Food Bazaar (go @foodbazaarsupermarket !) and did a Texas-meets-Eastern Europe rub (salt, pepper, coriander) Smoked them over pecan and apple wood for 10 hours. Topped with mint-cardamom skhug (one of the greatest Yemeni condiments to grace the earth). Amen.
