The makings of a VERY special cake! To celebrate the 100th Birthday of Sir David Attenborough, I’ve spent the last 2 days with the help of @bakewithrahul in my Science Kitchen creating a centrepiece for celebrations at @uniofleicester . With @rainbow_dust_colours and @squireskitchen helping provide the wow! It was always going to be special, but with David and his family sharing such a close connection to the University - having grown up on campus and with many buildings named after them - it made it even more meaningful. We’ve all grown up listening to David’s voice narrate the stories about the natural world - it’s amazing to think he was already 70 when I was born, and yet today he still continues to inspire generations. The cake concept was to try and celebrate the incredible career of Sir David – which is no mean feat as he’s spent over 7 decades in broadcasting. No one on the planet has seen more of it than him! It comprises 3 tiers of cake, journeying across the planet, with different sections representing a different ecosystem - from the icy Arctic and sweeping African plains to lush rainforests and the depths of the ocean. And atop all of this - a chocolate Earth! Such a joy to put together. Happy Birthday Sir David!!

How to create a wedding cake that captures the essence of the Opéra Garnier. That was the point. This wedding cake only makes sense if it is displayed at the Opéra. Thinking about details, creating sculptures and crafting 33.000 petals wasn’t an easy task. 1.800h of work, 200kg of sugar and tens of kilos of chocolate have been used to bring this cake alive.
