Tom’s path into winemaking began in New Zealand, where he trained in Viticulture and Oenology before joining Villa Maria, a producer closely tied to the global rise of Sauvignon Blanc. From there, his experience took him through the US and Australia, before arriving in England in 2017. For over six years, he worked at Gusbourne Estate in Kent, contributing to a body of still and sparkling wines that helped define the region’s growing reputation. He joined Squerryes at the point of its next chapter, taking on the role of Head Winemaker as the 2024 harvest came in. His approach is shaped by that journey. Not to impose a fixed style, but to understand what the vineyard is capable of, and to build on it over time. A long view, taken year by year.

The May bank holiday is looking a little livelier than usual. From 23rd–25th May, in conjunction with @westerhambrew at the Beggars Lane site, we estate will be hosting: • Saturday: Country & Western themed day with line dancing • Sunday: Military vehicle showcase around the brewery • Monday: “The Detonators” — classic American cars, swing bands, and a 1950s feel The Café and The Terrace will be open throughout, with a barbecue running on The Terrace on Bank Holiday Monday. A weekend to arrive into, with plenty happening as you move through the estate.

Squerryes Court opens its gardens on Friday 15th May for one day only as part of the National Garden Scheme. Often recognised for its connection to the Bridgerton filming locations, the house and gardens hold a longer story, shaped over generations and still evolving today. A rare chance to see a different part of the estate whilst helping to raise money for Cancer Research who will be selling refreshments. We look forward to welcoming you.

Asparagus has arrived across the estate. Now in the Deli and on the restaurant menu, it’s one of the clearest signs the season has shifted. Used simply, while it’s at its best. A short window, but always a good one. On our lunch and dinner menu, or available to buy in The Deli. @birchden_asparagus

The Terrace is open 🥂☀️ It’s the point in the year when the restaurant begins to extend beyond its walls. Tables move outward, the vineyard comes into full view, and lunch settles into a slower rhythm under the vines 🌿 Longer days call for longer lunches, and the new menu is designed just for that. Expect more choice, with a mix of small plates for sharing and larger dishes when you’re feeling indulgent. Lunch on the terrace is now available, weather permitting.

It usually starts with a coffee. Taken out into the vineyard, walking the rows as the day settles in. What was meant to be a quick stop often becomes something more. A return to the Café, a sausage roll still warm, or a toastie, avocado on toast, and then a decision to stay a little longer. By that point, it often calls for something else. A cocktail, or a glass of Squerryes, and no real reason to rush away.

May marks a shift across the estate. The terrace opens, tours and tastings return to the vines, and the day begins to stretch into the evening again. What was held indoors over winter moves outside, and the vineyard becomes part of the experience rather than something viewed from a distance. From here, the season begins properly. The Vineyard Café has reopened 🥂 The space returns with a renewed sense of warmth and care. Coffee made properly, a thoughtful menu, and somewhere that invites you to pause a little longer. Set against the estate, it’s as suited to a slow start as it is to a moment between walks through the vines. Open Wednesday to Friday from 9.30am to 4pm, Saturday from 9am to 5pm, and Sunday from 9.30am to 4pm. Soon to be open on Mondays and Tuesdays too. Open again, and ready to welcome you back. Opening hours will also be extending soon.

The first warm days draw people back into the vineyard. Tours move beyond the cellar and into the rows, where the landscape begins to explain what’s in the glass. Tastings feel different out here - less structured, more connected to where everything begins. It’s a shift you feel as much as see. Outdoor Tours and Tastings return on 1st May.
