As a refreshing summer libation the Midsummer Magic cocktail is a wonderful addition to a weekend dinner amongst friends. Midsummer Magic 1.5 oz Cognac VS 0.75 oz Pineau de Charentes rouge 0.5 oz strawberry syrup 0.75 oz fresh lemon juice Half white of an egg Spray of absinthe Add all ingredients but absinthe to a cocktail shaker. Add ice, shake, and strain into a chilled cocktail glass. Spray absinthe on top and garnish with a strawberry. Strawberry syrup 150 gr fresh strawberries 150 gr white sugar 75 ml water Remove tops from strawberries and roughly chop. Combine sugar and strawberries in a container and let sit for 24 hrs. Once the sugar has been infused with strawberry add water and mix to dissolve it. Strain off solids, gently press strawberries and collect all liquid. Friendsgiving, a quintessential American dinner, offers us the opportunity to celebrate friendship, life, and harvest with old friends, and to meet new people that will become old friends. Allow me to suggest a cocktail to toast these great moments: The Friendsgiving Libation 2 oz Cognac VSOP 0.25 oz ginger syrup * 0.5 oz vanilla syrup ** 1 oz lemon juice 2 barspoons pumpkin butter 1 dash Angostura aromatic bitters. Add ingredients to a cocktail shaker. Stir to incorporate pumpkin butter. Add ice, shake, and strain into a highball glass over fresh ice. Garnish with a dehydrated apple slice. * Combine equal parts fresh ginger juice with cane sugar in a blender. Blend until sugar dissolves. Keep refrigerated. ** Combine 6 oz cane sugar with 6 oz hot water in a blender. Blend until sugar is dissolved. Add 1 vanilla pod, split in half, seeds included. Infuse for 24 hrs and strain.
