Grateful to the Red Boat phamily for bringing me along. Experiencing Vietnam through Red Boat and Vietnamese-American chefs was truly a once-in-a-lifetime opportunity.

The A&D PORK CHOP
@purecountyklingeman loin chop, brined with warm spices, grilled and lacquered with a sticky-sweet concoction of fermented aprium/pluot mostarda and @redboatfishsauce caramel.
Served with a smattering of garum brown butter for good measure. On the side: a bright, messy tumble of herbs and stone fruit, sharp with pickled shallot and lime.
One of our best, ever.
A mashup of two of my favorite things - @flannerybeef + shawarma and accoutrements. We heavily spice dry-aged ribeyes with traditional shawarma spices, grill them hot and fast over charcoal, and serve with herby yogurt, sumac onion & parsley salad, a healthy glug of local olive oil, and a quick za’tar yogurt flatbread.
