Spearfishing Dog Snapper 💭 A lot of people have told me they rarely or never see Dog Snapper. Typically I find them deep in structure in caves or under ledges - places that aren’t so obvious. They’re one of my fish to hunt because of how tactical and quick you have to be. Dry Aged Rainbow Runner Sashimi 🤤 💭 Somehow I finally brought home the fish has eluded me for years. I don’t dive a lot of deep wrecks or do too much blue water Spearfishing off of my kayak, so I don’t run into Rainbow Runners very often, and when I do they’re relatively small like this one. This was my first drop of the day and I was getting ready to line up on a Yellow Jack when I noticed something odd about one of them. I quickly realized what it was and was able to land a shot that held on long enough for me to get my hands on him. While this might not seem like a trophy fish for most people, I was so stoked to finally land one. I had him back in the kayak before the sun even came up, and aged him for 7 days before making this sashimi platter. #spearfishing #catchandcook #recipeideas #sushi #sashimi

“Ew it’s looking at me.” 🙄 💭 Whether people realize it or now, all of the animal protein we consume comes from something that was once a living creature (yes, with eyeballs). Understanding where your food comes from and how it looked in its natural state gives you a whole different perspective and respect. I did it again…😅 💭 A few weeks ago I missed a nice Dog Snapper because I left my safety on, and I nearly did it again with this Mangrove Snapper less than a week later. This time I stayed cool and collected and just slowly turned the safety off and was able to land a stone shot. #spearfishing #florida #spearchannel #riffe #killshotlife

Never Give Up 🤙🏽 💭 This day I was out spearfishing off of my kayak in South Florida. The first drop of the day I accidentally left my safety on and ended up missing a nice Dog Snapper. Would you leave a fish in the fridge for 3 weeks before you ate it? This fish was spine shot, bled, held on ice overnight, undergone sukibiki (cut scaling) and then hung up in the fridge to dry age. The meat that is still coming off the frame 22 days later is impeccable, with an enriched flavour and delicate texture. It’s so interesting to have aged a number of fish this season and consider the differences in product, much still to learn. Though I do know for sure…if you take care of your fish you’ll be markedly rewarded💕
