Finally, @battambongbbq and @speak_cheezy are doing a collaboration and the result is fan-freaking-tastic. Everyone already knows that I can’t stop talking about Speak Cheezy’s Detroit—and that’s coming back with massive chunks of Battambong Bbq’s brisket.
It’s airy, it’s crispy—very crispy, and it’s so good. The flavor notes are the following: sweet barbecue lacquer, rich tender brisket, and bright pickly pickled pickles all contribute to a surprisingly balanced pizza. Oh, and the crispy cheese edge called “frico” elevates the experience tenfold.
Then there’s the twako pepperoni Sicilian square. The whole pie is laced with twako—a ferment-y Cambodian sausage. The result is a flavor bomb. The twako adds an aromatic depth to the pie with galangal and acidity lifting the other elements of the affair.

A little ways back, @karibarbatattoo has the pleasure of tattooing @chefjasonwinters , the head chef from @speak_cheezy !
He decided to get one of Kari’s signature octopus tattoos holding a slice of his favorite pizza slice from @lindustriebk !
