Grilled Crocodile Skewers with Lemon Myrtle Marinade
Ingredients: • 500g crocodile tail fillet, cut into bite-sized cubes • 2 tablespoons olive oil • 1 tablespoon lemon juice • 1 tablespoon ground lemon myrtle • 1 teaspoon ground native thyme (or regular thyme) • 2 cloves garlic, minced • Salt and pepper, to taste
Instructions: 1. Marinate the crocodile: In a bowl, mix olive oil, lemon juice, lemon myrtle, native thyme, garlic, salt, and pepper. Add the crocodile cubes and coat well. Cover and refrigerate for at least 30 minutes, or overnight for deeper flavor. 2. Prepare the skewers: Thread the marinated crocodile onto skewers, leaving a little space between each piece for even cooking. 3. Grill the crocodile: Heat a grill or barbecue to medium-high. Grill the skewers for 3-4 minutes on each side until the crocodile is firm and cooked through (internal temperature should reach 75°C). 4. Serve: Garnish with fresh lemon wedges and extra lemon myrtle. Serve with grilled vegetables or a light salad.
The lemon myrtle will add a citrusy, slightly tangy flavor that complements the crocodile meat well!
