The heat is turned up this weekend Astrologically things are tense and pretty weird 🤗 But there still can be little gems of nice surprises in between when there’s a Uranus transit (Mars square Uranus) 💎 I randomly stopped at the Freedom Farmers Market today and got these cutie little items and some flowers for a pretty girl 💐 (not pictured) Next week should be more chill. Gluten-free Tabbouleh 🌟 Recipe down below ⬇️ When the Sun is in Virgo, our vital energy shifts uniquely. Virgo rules gut health and general themes around healthy living ♍️ During this time (8/22-9/22) we can experience changes in our digestive sensitivity as well as increased anxiety/worry. We may also experience increased motivation for routines and healthy lifestyle changes. This recipe is designed to be particularly medicinal, nervous stomach soothing, and good for digestion. ⬇️✨⬇️✨⬇️✨⬇️✨⬇️✨⬇️✨⬇️ Ingredients: * 1 cup mint leaves * (1-3) cups parsley * 3 cucumbers (3-4 cups diced) * 1 small onion (~1 cup chopped) * lime/lemon (1/4 cup), salt (~1 T), pepper to taste * 6 cups pre-cooked quinoa (or quinoa/millet combo) * good olive oil (optional) Directions: * wash everything, pat herbs dry (or use salad spinner) * peel ribbons off cucumbers then cut in half and scrape seeds out with a spoon. Dice cucumbers * mince onions * chop herbs * mix in lime juice & salt/pep in with all these ingredients * add quinoa, mix & taste, should be light salt & lime essence. Finish with optional drizzle of olive oil

Nutrient infused sauwwce 🍯 Served this to friends as we celebrated my birthday week in Miami 😌 paired with organic chicken & potatoes as a wholesome meal. They approved ✔️😎 Ingredients: 2 cups carrot slices 1 cup coconut aminos 1 can (6 oz) tomato paste 3 tsp mustard powder 1 tsp smoked paprika 1.5 cup pure water 1-2 tsp coconut oil (or other oil) 4 tsp sugar or monk fruit sweetener 1 T apple cider vinegar Directions: 1. peel carrots and chop into slices 2. bake or boil carrots until soft, let cool 3. put all ingredients in a nutribullet style blender, blend until smooth 4. keep fresh sauce in fridge for ~1 week #plantbased #reducedsugar #healthyswap #healthyalternative

#glutenfree #refinedsugarfree #vegan #paleo #locallysourced 💜 Ingredients: 2-3 T cooking oil 2 tsp sesame oil ~5 cups Chinese/small variety eggplant medallions ~3 T gluten free Tamari 2 T pure maple syrup 5 T water 1 tsp arrowroot powder Directions: 1. prep eggplant, heat cooking oil & sesame oil in pan 2. add eggplant & start to sear 3. mix remaining ingredients in a bowl & make a “slurry” with the arrowroot powder 4. add sauce once eggplant is mostly cooked & simmer for a bit 5. it’s done when eggplant are really soft & starting to fall apart Enjoy!

Blood-sugar friendly sweet treat 🤎🤍 you can eat this as a snack without a crash 🧚 add your favorite protein powder if you want more balanced macros Ingredients: * 1 cup baked/peeled Japanese sweet potato * 1-2 T peanut butter * 1.5 T cacao powder * 2-3 T pure maple syrup * 1 tsp vanilla * 1/2 cup pure water (or as little as possible to blend) * 1/4 cup melted coconut oil Directions: 1. make sure ingredients are either room temp or warm to blend properly with coconut oil 2. put all ingredients in a nutribullet or Vitamix blender (ideal to use a big powerful blender if doubling or tripling the recipe) blend smooth 3. serve chilled dusted with cacoa & sugar/monkfruit sugar **this is a very basic version of this recipe, it’s best if you add toppings/mix-ins. Blending in a bit of your favorite protein powder does super well. Topping with cookie crumbs, coconut flakes, nuts, more syrup, or honey is yum. Addictive pasta salad 😋 Made a little easier by cooking the peas and pasta in the same pot 🏃‍♀️ Loved this rice & lentil pasta! Got it at a grocery store in Denver CO ⭐️⭐️⭐️⭐️⭐️⭐️⭐️ Ingredients Salad: * 1 box of pasta (I used rice & lentil pasta) * 1/2 of a 16 oz pack frozen peas * 2-3 cups chopped green cabbage * 1 bell pepper sliced thin * fresh basil * lemon (garnish) Dressing: * 1 tsp onion powder * 2 tsp dried oregano * 1.5 tsp dried cilantro * 1.5 tsp mustard powder * 3 T nutritional yeast * 2 tsp Herbamare (herb salt) * 1/4 cup apple cider vinegar * 1/2 cup good quality olive oil Directions 1. Bring peas to a boil in same pot & water you’ll be cooking pasta 2. Add pasta & boil until al dente (with the peas) 3. Chop cabbage & slice up bell peppers, slice basil into tiny ribbons while pasta cooks 4. Strain & let pasta/peas cool 5. Add dressing ingredients to a nutribullet & blend until herbs are broken up finely 6. Mix all ingredients, garnish with lemon/juice.
