Todayâs coffee âď¸
PanamĂĄ Geisha
Delicate notes of jasmine and soft florals, finishing smooth and sweet.
Brewed on the ceramic Origami, set on an Osaka-style holder to allow proper aeration and a steady, even flow. Ground slightly coarser than usual to keep the cup clean and balanced.
Light, elegant, and quietly expressive â exactly what you want from a Geisha.
Brew slow. Sip slower.

Weekend vibes in Queens âď¸đ˛
Another incredible weekend connecting with our coffee community at Sunnyside and Jackson Heights Farmers Markets! From sunrise setup to the last pour, these markets are where the magic happens.
What you saw today:
â Fresh batch brew ready to serve (because who doesnât need that first sip?)
đŤ Whole bean bags packed with this weekâs roasted-to-perfection single origins
đ Our full menu of pour overs, cold brew, and batch brews
⥠All powered by our solar setup - sustainable coffee from bean to cup
Every pour tells a story. Every bag carries the care we put into analyzing each green bean with our #DiFluidOmix, perfecting roast curves on the #AillioBulletR2Pro, and bringing you flavors you wonât find anywhere else.
To everyone who stopped by, tried something new, asked questions about processing methods, or just said hello - youâre the reason we load up the cargo bike every weekend. This Queens coffee community is something special.
Canât make it to the markets? Weâre also at @vitality.jb during the week, and our online store is coming soon!

Morning routine with @origami_coffee.jp and @cafec_japan filters this morning I brewed a Uganda Bugisu, Washed Process, amazing nutty notes and vibrant acidity.

A properly dialed-in double espresso.
Balanced extraction, proper crema, correct ratio, served the way itâs meant to be.
Simple things done right.

Funny how life works sometimes.
What once felt impossibly far away slowly became real through early mornings, late nights, mistakes, risks, and a lot of coffee.
As clichÊ as it sounds⌠dreams really do come true when you refuse to let them go.

âThey say if you do what you love, youâll never work a day in your life.â
Turns out⌠you still work incredibly hard.
But waking up excited every morning changes everything.
POV: walking to the coffee shop you dreamed about opening while carrying the same passion that started it all.
And honestly? Still feels surreal.

Built slowly. Built with intention.
From apartment coffee events, wet and cold weekends at the farmerâs market and late-night roasting sessions to opening our very first coffee house in Sunnyside â the neighborhood that inspired so much of the vision behind Sloth Brew from day one.
This space was created for coffee lovers, creatives, conversations, and community. A place to slow down, connect, and share something meaningful over a cup of coffee.
Standing here today feels surreal.
And this is only the beginning.
Brew slow. Sip slower.

Todayâs coffee âď¸
PanamĂĄ Geisha
Washed process
Delicate florals with a more pronounced mouthfeel â a slightly fuller expression than expected from a washed Geisha.
Brewed using the Cerapotta from Cerapotta Japan, a filterless ceramic brewer that allows more oils and texture into the cup.
The result is elegant, but with added weight â where clarity meets body in a really unique way.
Grateful to explore new tools and new expressions of the same coffee.
Brew slow. Sip slower.

Todayâs brew âď¸
Ethiopia
Natural process
Fruity, vibrant, and expressive â lifted into a lighter, more refreshing cup.
Prepared as an Aerocano:
18g coffee â 54g espresso, topped with cold water to 160g total, then lightly foamed with the steam wand.
The result is airy, textured, and bright â almost like a coffee cloud.
All the character of a natural Ethiopia, but in a softer, more playful form.
Not every brew has to be traditional.
Brew slow. Sip slower.

PanamĂĄ Geisha
Washed process
Vibrant acidity, light body, and a clean, sweet finish.
Brewed on the Kalita Wave at 93°C, with a 45-second bloom to build clarity and balance from the start. The flat-bottom brewer keeps the cup structured, letting the brightness come through without losing sweetness.
Light, expressive, and quietly elegant.
Brew slow. Sip slower.

Todayâs brew test âď¸
El Salvador, Picacho
Washed process
Same coffee. Same recipe. Two different brews.
One on the Origami.
One on the Fellow Aiden.
Same ratio, same temperature, same bloom â but completely different expression in the cup.
The Origami brings a bolder, more pronounced front.
The Aiden smooths things out, with a softer, more rounded finish.
A reminder that the method is never just a tool â itâs part of the flavor.
Man vs machine.
Both right. Just different.
Brew slow. Sip slower.
