A New Partnership: Billington Mushrooms x Slam Tacos at Bison Beer Hove! This is a story about big flavours, fresh ingredients and a new collab to get excited about. @billington.mushrooms is now supplying their sustainable mushrooms to @slamtaco at @bisonbeer in Hove – this is a rare opportunity for food lovers to try locally grown premium mushrooms in a restaurant setting......washed down with a craft beer of course. Award winning chef Sam Lambert - @slambertcooks says; “The way I do things is simple: buy the best ingredients I can locally. This weekend we celebrated all things Mexican, tacos, tequila & more 🌮🍸💃 We stuffed our faces on mouth watering authentic tacos from loads of different traders, every single one was a hit but the most talked about tacos in our group where from @slamtaco @nopalito_uk and those beef birria tacos from @overdraftbars 👌👌 Our standout cocktails were the watermelon margaritas and the classic 🍸 What an amazing day this was. Burns Night 2026 by @albertas.food , @thelittleyellow_ and @slamtaco 🏴󠁧󠁢󠁳󠁣󠁴󠁿 A trifecta of Brighton and Hove’s top chefs: @thefatscottish , @slambertcooks and @lukadmitryjchef , serving up a Scottish menu to celebrate Burns Night 2026. Welcome to my award ceremony of everything we ate: 🏆 The best Bloody Mary ever (the Bloody Burns) was levelled up with homemade beef broth and beef fat-washed whiskey. Throw in a slice of biltong and a piece of Yorkshire pudding on the top? Lovely touch 😏🇿🇦 🏆 An unexpected nibble: Babble’s crispy tatties with haggis. 10/10, no notes. 🏆 The dish I wouldn’t normally order as I have an immature aversion to ordering soup, that ended up blowing me away: Luka’s Cullen skink consommé with truffled egg and roast celeriac. Elite. 🏆 The dish of which I was slightly afraid that proved I need to get over my preconceptions, especially as a meat-eater: Sam & Luka’s sheep brain tacos with Irn Bru piri piri and white pepper sauerkraut. The brain was crispy on the outside and slightly creamy on the inside, nicely balanced by the tangy sauerkraut. I didn’t love the texture, but I’m not used to it in a savoury context. 🏆 The dish we nearly didn’t order but was a firm favourite: Sam & Luka’s pork chop schnitzel with skirlie crumb, whiskey BBQ sauce and topped with a fried egg. Hated that I had to share. Woe is me. 🏆 The dish that tied everything together: Sam’s mini haggis pie with puréed neeps and tatties. In some ways I want a big version (when I plan on ordering less), but maybe some things are better left collecting the pastry flakes with your finger, wishing it wasn’t over? 🏆 The rite of passage: Finally trying Ali’s Alberta’s fried chicken felt ceremonious. I’ve never eaten fried chicken that I haven’t loved, but I wasn’t expecting to love this SO much. It is not just any fried chicken. The sea buckthorn butter and scotch bonnet chilli sauce probably help with that. 🏆 And the award for the only suitable way to end a meal like this goes to Ali’s Mars affogato with batter bits and miso caramel. Essentially, a deconstructed deep fried Mars bar served with an espresso. Was not going to let a drop go to waste.
