一期一會Ichi-go ichi-e “One time, one meeting” This moment will never happen again. Every encounter is unique and should be treasured as if it’s the only chance. I’ve taught tea on TV, in magazines, through newspaper interviews, and in workshops. But no matter the stage, what stays with me are the people... and the quiet moments we share, cup by cup. I’m absolutely thrilled to have had the opportunity to cook at Halterhus🐮! Our 8-course nose-to-tail menu was a success, and I loved seeing guests discover new flavors and textures without knowing which part of the animal they were enjoying. It added an extra layer of excitement to the dining experience!
