Two spots have miraculously come up for our indigo painting and stitching weekend on the 2nd and 3rd of May ( that’s next weekend). It would be terrible not to fill them as Cath from the @thehappenstore workshops are the best and so hard to get into and sell out the minute we publish them. It is such a wonderful two days of working with indigo, learning to stitch, indulging in beautiful organic food from our own garden and soaking up the beauty of @essington_park I will be cooking for you all weekend @simmonelogue and you will meet new friends which is the good bit. You can pickle almost anything you know.. We have so much rhubarb in our garden at the moment I am finding creative ways to use it up or preserve it for later on. This pickle partners beautifully with a piece of soft cheese and a bunch of rhubarb is really pretty and quite dramatic in a vase also. Have a lovely Wednesday where ever you may be. Simmone x

A heartfelt thank you to all we have shared deliciousness with this year . We wish you a happy and safe Christmas full of love and light .. If you are about to pop a ham in the oven, here is my simple although delicious glazed Christmas ham recipe .. Pull the skin from your ham leaving as much fat on as possible. Score into little diamond shapes and stud with cloves. Turn your oven on 170 Celsius. Place a saucepan on medium heat, add brown sugar, orange juice, seeded mustard, garlic, fresh thyme and a couple of bay leaves. Cook for 15 minutes until the flavors have mingled and the sauce has thickened a little. Pour the glaze over your ham and cook until deeply golden basting with the pan juices every 15 minutes. Don’t rush it as low and slow is the best way. Get ready for the house to fill with the magical scent of Christmas. Enjoy !! Laden with Aussie fruit and soaked in brandy my Christmas puddings are available from home this year @essington_park They have been hanging in the barn for a few months to allow maturity and depth of flavor and they are as good as they’ve always been. It occurred to me yesterday that I have been making them for the last 30 years.
