Kingdom Creamery, a VT family run dairy farm and creamery in Hardwick, VT, makes a simple base mix that is 10% cream vs. the standard 5%. To this base I add very dark maple syrup, and shake it all together.
No artificial flavoring.
No filler ingredients.
Pure and natural.
Made in VT.

Why wood-fired maple syrup?
4 years ago we bought a brand new evaporator. It was assumed that with the upgrade, we would switch to burning oil. āYouāre still burning wood?!ā This exclamation was repeated time and again by people surprised that our new evaporator - was still heated by good old-fashioned wood.
Sustainable. Renewable. Traditional flavored maple syrup, that is purely incredible.
Boiling with wood is less efficient, labor intensive⦠Still, when it was time for a larger evaporator to accommodate boiling more syrup, continuing to burn wood wasnāt a question.
We take a holistic approach to our maple syrup production, specifically in managing over 600 acres of maple sugarwoods. The fire wood that boils the wild harvested maple sap into maple syrup, comes from cleaning up dead trees, down trees, and occasional strategic thinning to better the health of the maple trees, and maintain a thriving habitat for a diversity of trees, birds and wildlife.
Making wood-fired maple syrup is our commitment to quality, caring for the health of our environment, and continuing the tradition of our maple sugaring heritage.

Using the Hanna Checker to digitally grade maple syrup is helpful in confirming grading accuracy, particularily when grading Golden Delicate maple syrup.
* The correct term is āLight transmittanceā, not light transparency. Pardon my misspeak.
The āGradeā, of maple syrup is a measure of color not quality. The lighter the color grade, the more delicate the flavor. The darker the color grade, the stronger the flavor.
There are many factors that contribute to maple syrup resulting in a certain grade. Typically the lighter syrup is made early season, the amber throughout, and the dark at the end.

Homemade bread on the fly.
Itās true, you donāt have to ādo it perfectā, to make a truly āperfectā loaf of deliciously moist bread with a lovely crust.
Maple Wheat Bread
4c. warm water + 1 c. 2 1/2 c. organic rolled oats 2 T. butter melted
1/2 c. Silloway Maple Syrup + 2 T.
1 1/3 T. active dry yeast
1 T. salt
10 c. flour (I use @redhenbaking organic heritage wheat flour.)
Dissolve yeast in 1c. warm water, add 2T. Maple Syrup.
Add oats, butter, and remaining Maple Syrup and water to a large mixing bowl. Stir for two minutes to soften the oats.
Add the yeast mixture to the dough, stir together. Add remaining flour and kneed for about 5 minutes.
Cover with a towel and let rise until doubled. (I left this to rise for about 5 hours today)
Punch down risen dough and divide in half. Form loaves and place in buttered loaf pans. Cover and let rise until doubled. (I left them for about two hours) This recipe makes two good sized loaves. Bake at 350 degrees for 45 min. - 1 hour, until golden brown and hollow-sounding when tapped.
Spread with butter and maple cream. Thereās little more wholesome and welcoming than warm homemade bread. š

Silloway Maple Old Fashioned š
In a glass with ice -
- Add 1 bar spoon of Silloway Maple Bourbon Barrel Aged Maple Syrup
- 2 oz. of Woodford Reserve Whiskey
- 3-5 splashes of bitters
- Cherries and orange peel twist for garnish
Not too sweet, but make it sweeter if you like.

With the last spout pulled, the 2026 sugaring season is officially over.
Over the past 3 1/2 months weāve climbed mountains, frozen fingers and toes, watched sunrises and sunsets from the among the trees, stayed up all hours of the day and night, thrown 50 cords of wood - twice, cherished every drop of sap gathered, and relished with delight streams of finished maple syrup - pure perfection.
Yesterday, slipping down a mountainside, one eye scratched by a branch, the other stinging from a spout full of sap⦠I thought, what a miracle to be out here.
For me personally; to have overcome debilitating hurdles to hike sure-footed across miles of impossible terrain, on strong legs. Feeling the sunshine on my face, beneath a canopy of tall trees, witnessing the blooms and beauty of the woods not many get to see. In these cherished moments I find freedom, peace, and contentment.
For all of us collectively; what is better than planting a tree? Staying to tend and steward. It is the love of the land, this way of life, making a perfect food from a wild-harvested sap, no one would work this hard if they didnāt love it.
There are those who want to make laws that, āconserveā the land. From well intended hearts Iām sure. But the best long term conservation, is good stewardship, care, and use. Itās the people who make their living from the land I believe, who love it the most. We want to see it flourish, and have long term vision and care so that it will continue to flourish for generations to come. Which is why some of my favorite people to give tours to are environmentalists, environmental lawyers, climate change journalists, etc. Because sometimes there is a breach between papers and articles and projected research - and the actual real-world unfolding of nature. Away from desks and papers, I want you to take a walk in the woods. Observe your environment, and not just read about it.
This is our life. This is our home. The best way to preserve the woods and pastoral views that people flock to VT to enjoy, is to preserve the ways of life of those of us who take care of it.
