Sawa - A Luncheon for Lebanon On Sunday, April 12, we will organize a special lunch at Mokonuts with our friend Mariam from Sila.table. Together (Sawa!), we will cook a 7 course Lebanese meal to help affected families back home in Lebanon who have lost everything. It is a drop in the bucket but every donation helps. All proceeds from this lunch will go entirely to @beitelbaraka , a Lebanon based non-profit community that works on the ground running shelters, providing hot meals and basic necessities to thousands of displaced families affected by the war. Since space for the event is limited, we will also sell off the counter special cookies and t-shirts from noon until we sell out. You can reserve directly on the Mokonuts website. Cooking in the middle of heavy days, in my parents kitchen in Beirut ♥️ In a country going through so much, the simple act of making food, setting a table, and feeding the people you love becomes something bigger. This kitchen has seen everything: loud family lunches, quiet mornings, power cuts, celebrations, and difficult conversations. But the stove is still on, and we keep cooking. Because here, food is not just food. It’s resilience, memory, and a way to hold on to each other when everything else feels uncertain.

Whole Roasted Sea Bass with Clementine Tahini & Apple Fattoush Flaky oven-roasted sea bass glazed with pomegranate molasses, served over silky clementine tahini and topped with a crisp apple fattoush and sesame pita shards by @sila.table A bright, balanced dish, perfect for a refined lunch or Ramadan table. Serves 3–4 Ingredients Sea bass • 1 whole sea bass, cleaned & butterflied • Salt, olive oil Pomegranate glaze • 1½ tbsp pomegranate molasses • Juice ½ lemon • 1 tbsp olive oil • 1 tsp honey (optional) Clementine tahini • 3 tbsp tahini • 1 clementine (zest + juice) • Ice-cold water, salt Apple fattoush • 1 green apple, diced • ½ cucumber, radishes, spring onion • Parsley & mint • 1 tbsp olive oil • Juice ½ lemon • 1 tsp pomegranate molasses • 1 tbsp toasted freekeh (crushed) • Splash verjus, salt, sumac Sesame pita • 1 pita, olive oil, sesame seeds Method Roast fish at 200°C for 10 mins. Brush with glaze and roast 5–8 mins more. Whisk tahini with clementine, salt, and cold water until smooth. Mix salad ingredients just before serving. Bake oiled, sesame-sprinkled pita until golden and break into shards. Serve sea bass over tahini, top with fattoush and pita. Pair with rice cooked in fish stock. سمك قاروص مشوي مع طحينة بالكلمنتين وفتوش التفاح طبق متوازن يجمع بين حلاوة دبس الرمان، حموضة الكلمنتين، وقرمشة التفاح — مثالي لغداء راقٍ أو لمائدة رمضانية. يكفي 3–4 أشخاص الطريقة باختصار: اشوي القاروص المتبّل بالملح وزيت الزيتون على 200° لمدة 10 دقائق، ادهنيه بدبس الرمان وأعيديه 5–8 دقائق. اخلطي الطحينة مع برش وعصير الكلمنتين والماء البارد حتى تصبح ناعمة. اخلطي مكونات الفتوش وأضيفي التتبيلة قبل التقديم. اخبزي خبز البيتا بالسمسم حتى يقرمش. للتقديم: افردي الطحينة، ضعي السمك، أضيفي الفتوش وكسّرِي البيتا فوقه. يُقدّم مع أرز بمرق السمك.
