Mango sago chiffon cake for @wednesdays_fun 100th event!
🥭🫧🥥
Did not think that we would have room for cake after a 7-course Chinese banquet from @celestialpeach_uk - I brought boxes for people to take cake home with them, so I was so pleased that this whole cake disappeared in moments and was a hit!
Made a note to self to include fresh mango and sago in-between the cake layers next time for an more intense mango/sago hit 💥
Chiffon cake
Coconut whipped cream
Fresh mango
Mango jam
Sago

In September, I took some time off from my job due to stress/burnout and decided to do some baking which a. meant I could do something I enjoy to feel better, b. gave my days some structure, and c. got to test out some ideas on friends. It took a lot longer than just the month to feel like myself again, and although we're already in March, I'm hoping I can do more baking in 2026!
This box included:
💚 Pandan basque cheesecake
🖤 Black sesame, chocolate chip and salted egg yolk cookies
💜 Ube butter mochi
🤎 Chai custard tart
Mexico City 💚🤍❤️
Wherever you look, there is colour. The brightly coloured houses, intermittently draped with paperflowers, to the displays of fresh fruit and vegetables found at the mercado, or perhaps sold from the back of a truck.
The array of sweets at dulcerias, held within clear plastic containers that remind you of Woolworths pick and mix.
Neat rows of agua frescas - hibiscus, tamarind, horchata.
Salsa rojo, verde, mole.
In the morning, you can smell the heat coming off the comals, ready for the day's trade. Sweet breads, coffee, atole, cinnamon.
Later, the traffic builds, and the scent of petrol is a backdrop to the al pastor and guisados, it is difficult to not feel hungry in this city.
There are the expected sounds - car horns, dogs barking, people chatting. Maybe you didn't expect the call of the bicycle street vendors as they pass your window offering tamales and more. The looped recording of a young child announcing the scrap metal van, the clash of overlapping boomboxes, and the occasional mariachi band serenade.
I think I'm in love with the place.
