Indonesia Kerinci Barokah Bersama Anaerobic Natural
Tropical Fruits • Dark Chocolate • Rum
Grown on the volcanic slopes of Mount Kerinci in Sumatra, this anaerobic natural lot delivers a bright, structured cup with vibrant acidity and layered sweetness. Carefully fermented in sealed conditions for 7 days and slowly dried on raised beds, the process brings out expressive tropical fruit notes, deep dark chocolate character, and a subtle rum-like finish.
Produced by 320 smallholder farmers of the Koerintji Barokah Bersama Cooperative, this is a coffee we’ve proudly returned to for three seasons in a row — a reflection of both exceptional quality and long-term relationships at origin.
At Shavi, we’re always drawn to coffees with clarity, character, and a strong sense of place. This lot captures all three - clean, expressive, and especially beautiful as a filter brew.
☕ From civil engineering to co-owning a specialty coffee roastery, Thibault’s journey proves that passion can lead us down unexpected, rewarding paths.
🌍 As one of the owners of Shavi Coffee Roasters, a company now based in Georgia, Uzbekistan, and the USA, his excitement for coffee - and for what’s possible when people truly care about what they do - continues to shape everything we build at Shavi.
🌱 What started as a rediscovery of coffee through curiosity and connection has grown into a deep commitment to quality, education, and community. Today, Thibault is not only involved in every stage of our roasting journey, but also actively working to bridge the gap between origin, roastery, and cup.
💡 For him, specialty coffee is not a trend or a label - it’s a mindset. One built on care: for the farmers, for the process, for the people who drink it, and for the endless details in between.
🚀 As Shavi continues to grow, so does the vision behind it - to make specialty coffee more accessible in Georgia, Uzbekistan, and other countries, while also putting Georgian coffee culture on the global map, starting with the US.
🤍 And at the center of it all is a simple idea that keeps coming back:
Coffee is not just something you drink.
It’s something you connect through.
Your favorite spring & summer drinks are back.
Classic Cold Brew, Cold Brew Tonic, and more - available wherever you get your Shavi fix.
