For this episode, we head to Seva, one of San Juan’s most talked-about spots, led by chef couple Neil Dy and Amanda Hao. Recently included in the inaugural Michelin Guide selection for Manila, Seva has quickly become part of a new wave shaping the city’s dining scene. With the opening of Sala by Seva, their cocktail-forward lounge next door, the space now transitions seamlessly from intimate dinners to late-night drinks.
In our video, Neil and Amanda prepare their Iberico Secreto, a dish that reflects their culinary ethos: refined but unfussy, thoughtful but never overworked. Seva represents a generation of young F&B professionals building something distinctly their own and energizing Manila’s landscape in the process.
