Mega mega exciting experience getting to work alongside the @threepools_permaculturefarm crew and beyond. We curated a six course feast displaying yummy seasonal flavours and unconventional cuts of meat…. we made our own bloody sausages from ox hearts and served them with a foraged blackberry sauce, jersusalem artichoke puree and a sprinkle of penny bun salt. @hannahkempe spent weeks foraging acorns and making cheeses with milk from a lovely small local dairy farm hosting jersey cooows and the entire @threepools_permaculturefarm crew spent many a night after dinner gathered round the table shelling acorns for the biscuit accompaniment alongside the hand picked perry braised pears, hawthorn puree, toasted hogweed seed and roasted dandelion syrup dessert !!!

if I were to be a fruit I’d like to be a Rosehip
I collected a lot of it this year and last and experimented with two types of syrup making, the long n slow method and the quick one, both equally delicious and potent, as well as being medicinal … especially after adding warming seasonal spices to the extra bottles I decided sell this year, I also reserved some for Rosehip mead that is slowly brewing for the spring
Rosehips are known to contain over 20x more vitmin c than oranges, and a great source of vitamin A, D and E. They can be considered anti-inflmmatory if taken responsibly and medicinally, and can be used as a sweet or savoury ingredient, I recently used then in a reduction with ceps a top hogget and pumpkin purée 👌

Foraged Apple molasses infused with hogweed seed and geum urbanum root for the buttery caramel.
