Spring Sourdough Sandwich with Sauerkraut, Pickled Onion & Tofu-Cucumber Cream
(serves 2)
Ingredients
Pickled onions
* ½ red onion, very thinly sliced
* 2 tbsp apple cider vinegar
* 2 tbsp warm water
* pinch of salt
For the cucumber–chive spread
* 200 g firm tofu
* 3–4 tbsp thick probiotic yogurt
* 1 tbsp olive oil
* 1 tbsp lemon juice
* zest of ½ lemon
* 1 small garlic clove
* 2–3 tbsp finely chopped chives
* 3–4 tbsp very finely grated cucumber (well squeezed)
* salt + pepper
* optional: tiny drizzle honey
Sandwich
* 2–4 slices sourdough bread
* Radishes, thinly sliced
* ~1 cup unpasteurized sauerkraut (well squeezed)
* drizzle olive oil
Instructions
Start with the pickled onions.
Combine the sliced onion with vinegar, warm water, salt, and a small drizzle of honey if using. Toss and let sit while you prepare everything else. (They’ll soften and turn bright pink.)
For the cucumber-chive cream, blend the tofu with yogurt, olive oil, lemon juice, zest, and garlic until completely smooth. Fold in the chives and the well-squeezed cucumber, then season generously with salt and pepper.
Toast the bread in a pan (or toaster!) with a little olive oil until golden and crisp on the outside.
To assemble, spread a generous layer of the cream onto the bread. Top with sauerkraut, a small amount of pickled onions, and radishes. Finish with a light drizzle of olive oil, top with the other slice of bread, and serve.
